I'm the director of the Celiac Disease Center at Columbia University. We’re not sure why a gluten-free diet has become so popular but of all the diets if you look at the diets such as veganism, organic food, low carb, South Beach Diet, paleo diet, etc they don't have the medical legitimacy that a gluten-free diet has. A gluten-free diet is prescribed as a treatment for celiac disease. Also, there’s a lot of mythology that's going on. There are several books that tout that gluten is the source of all evil, causing autoimmunity, causing dementia and brain issues, and responsible for us being obese, big bellies, wheat bellies, and there's very little scientific evidence to support the benefit of a gluten-free diet in anything except celiac disease. So, celiac disease is an autoimmune disease that occurs in genetically predisposed individuals that develop this immune response to gluten which is the term for the storage protein of wheat, rye, and barley and it's actually very common. It occurs in about 1% of the population which makes it one of the most common autoimmune genetically-determined condition but in this country, only about 20% of the individuals with celiac disease are actually diagnosed. Now, in the time that celiac disease has been noted to increase, a gluten-free diet has become very popular. More than twice that percentage, like 2-3% of the population are actually avoiding gluten and we not sure why that is. The people who avoid gluten or PWAGs “people who avoid gluten”, we don’t know why they are doing that, so it's a very trendy diet, it's a popular diet.

What it does is it causes an inflamation in the lining of the stomach that can produce dehabilitating symptoms. Gluten is a protien that can be found in barley, wheat and rye, and what it does is, once ingested it can cause inflammation or slight gastro-intestinal discomfort, such as bloating or gassiness. An approach is to eliminate all gluten in your diet to prevent dehabilitating signs and symptoms of Celiax or a slight gluten intolerance.

My answer is that it really depends on you. I will show you the pros and cons of rice and go over what I believe is the healthiest rice today. There is a debate today about if you should consume rice or not: ⁃ The paleo diet community says to stay grain-free and therefore that rice is not healthy ⁃ Chinese medicine followers and vegans think rice can be an incredible superfood I believe there is validity to both but it depends on the person and the preparation of the rice. Rice to stay away from: Refined White Rice (This is not jasmine or basmati rice but the sticky white rice from fast food or Chinese restaurants.) Rice Cons: • Fiber, minerals and vitamins have been removed. • Study shows that people are twice as likely to develop diabetes as opposed to those eating whole grain brown rice. • Contains phytic acid (enzyme inhibitor) which keeps you from absorbing and digesting vitamins and minerals. • Contains proteins that are difficult to digest Rice Pros: • Whole grain brown rice is high in B3 which is good for heart health. • Whole grain brown rice is high in selenium which supports the thyroid and kidneys. • Certain types of rice contain GABA, a neurotransmitter that can support the brain and help reduce anxiety as well as support metabolism. So ... is rice healthy? Is brown rice healthy? It depends on how it is prepared. I believe if rice is soaked and sprouted, it unlocks the vitamins and minerals versus most rices that aren’t sprouted. I personally consume an organic rice from the company, True Roots. It is a germinated brown rice (soaked and sprouted) which kills off phytic acid and is easier to digest. In Chinese medicine, look up “qi” or “chi.” They believe that short grain brown rice increase your body’s “qi” which is your body’s life source and energy. It is considered to be one of the #1 healing foods. I suggest my patients make a “congee” with chicken bone broth, brown rice and vegetables such as carrots and celery. This chicken vegetable rice soup is healing and nourishing to the body. In conclusion, is rice healthy? Yes, it can be if you are doing sprouted rice that is traditionally prepared. Everywhere you look these days, experts are telling you not to eat gluten. What’s up with this food and do you really need to avoid it? Here’s the deal: for thousands of years, wheat and other grain were a healthy staple in our diets. Grain, including wheat, an ancient, 10,000-year-old food staple has become toxic junk food, though. You can blame this sad fact on the industrialization of the farming and food manufacturing industries. First, we started to mill the whole wheat kernel into highly processed white flower – removing parts of the plant to make the wheat flour that is used commonly today in thousands food products. Before this process was industrialized, though, the entire kernel of wheat was ground on a stone, keeping the entire plant intact. This is where the nutrients of wheat were derived. Once steel rollers came into play, the wheat had to be separated from its shaft, to make “fancy flour” as it was called, and then laid out to be smashed up into a product we could consume. Without the entire wheat kernel (including the bran, germ, shorts, and red dog mill streams) that are richest in proteins, vitamins, lipids and minerals, we ended up with a beautiful white powder that is now making everyone sick. This is gluten. But that wasn’t enough. Wheat next underwent “advancements” like genetic modification and being sprayed with tons of toxic chemical herbicides before being harvested, just before harvest, and even sometimes once it was on a truck to be shipped across the world to be ground into more white flour, devoid of any nutrients. The wheat flour we eat today is now not only completely absent of its original nutrition, but is highly toxic due to the copious amounts of chemical herbicides, fertilizers, and pesticides used on it. So, do you want to eat white, processed gluten? It’s up to you. A better option is to stick to grains that are still whole – and thus retain their nutrients. It’s also a good idea to seek out buckwheat, amaranth, quinoa, teff, barley, and other grains that have been grown without Genetically Modified seeds and without chemical herbicides. You may not seem to be affected by eating pure white flour, but if gluten isn’t for you, you’ll know simply by removing it from your diet for a few weeks and noticing any changes in your energy and health.

Because many foods are made from these grains, including healthy foods such as cereal bars, gluten is widely found in our food chain. Knowing that gluten is, is an important step in improving your quality of life; however, some of the symptoms of a gluten allergy or intolerance are so common that many people don’t even realize they are allergic or intolerant to gluten. Besides that, few people know the name associated with gluten intolerance, and are therefore unable to seek treatment or change their eating habits. Have you ever heard of Celiac Disease? This sickness is an autoimmune condition that affects people with hypersensitivity to gluten. Let’s learn about the ten most common symptoms related to a gluten allergy, in order to understand the best way to create a routine to avoid gluten. 1. You could double it to make a dozen. Enjoy! Potato Rosti 1 sweet potato, peeled and grated 2 yellow potatoes, peeled and grated 1 tbsp olive oil ½ tsp garlic powder salt and pepper sour cream and chives for garnish Preheat oven to 375°F. Grease a muffin tin with oil or cooking spray. Using a kitchen towel or cheesecloth, drain the excess water from the potatoes. In a large bowl, mix potatoes with olive oil, garlic powder, salt and pepper. Press potato mixture into each muffin cup created a small reservoirin the centre. Bake for 30-40 minutes or until they reached your desired crispness. Top with sour cream and chives. This recipe makes 6 rostis. You could double it to make a dozen. Enjoy! Almond Breakfast Bites 1½ cups almonds ½ cup sunflower seeds ¼ cup raisins ¼ cup cranberries ½ cup almond butter ¼ cup honey Line a muffin tin with cupcake liners. In your food processor pulse almonds and sunflower seeds until they become coarse crumbs. In a small saucepan or in the microwave, heat almond butter and honey until they are smooth and easy to pour. In a large mixing bowl, combine almond mixture, raisins, cranberries and almond butter mixture. Use your hands to mix everything thoroughly. Press mixture into each muffin cup. Turmeric powder: 1/2 tsp Grated coconut: 1 tsp (optional) Method: Heat oil in a pan, add in mustard seeds, jeera, urad, and bengal gram. Add in whole chilies and peanuts. Fry for 2 mins on low flame so that the peanuts are roasted. Add in green chilies, onion, ginger, curry leaves and mix for a minute. Add in turmeric powder. Add grated coconut if adding. Crumble idli with your hands and add add and mix well for a minute or two.
