Prolamins are proteins that exist in the seeds of cereal grains. Prolamins: Gluten consists of a prolamin and a glutelin. Prolamins are storage proteins, and they are the “hardware stores” of the wheat structure that distribute amino acids central to the plant’s development. Glutelin is the “glue” that holds these hardware stores together. Wheat gluten itself consists of the prolamin gliadin and the glutelin glutenin. Gliadin stimulates zonulin, the traffic cop of the gut lining, to allow it to pass into our digestive tract largely undigested and interacting with tissue transglutaminase (tTG), an enzyme found throughout the body. Tissue transglutaminase is a critical part of how the body functions, and specifically, how the tight junctions in the microvilli (think hairy fingers) in our gut are formed. When tTG interacts with gliadin, it creates antibodies - enzyme that is such an important part of our body is now bad - body attacks itself. Celiac disease is one of the most well-known gluten-related diseases, and those with the disease are advised to avoid more than wheat. ● Roughly 1% of people have celiac disease- Besides wheat, the following grains contain prolamins: Grain Prolamin Protein Wheat Gliadin Barley Hordein Oats Avenin Corn Zein Rye Secalin Sorghum Karirin Not all prolamins are believed to trigger celiac disease - the main ones are those from wheat, barley, and rye. Oats can be a trigger for some. So how do prolamins and gluten relate? ● The prolamin gliadin in wheat is the main protein that is believed to trigger celiacs, and gliadin is one of the proteins that makes up gluten. Prolamins can cause more problems than just celiacs disease. For those who react negatively to them, they can cause: ● Brain fog ● Joint pain ● Thyroid issues ● Chronic inflammation ● Increase intestinal permeability Many of the negative effects are due to a proinflammatory immune response to prolamins. In studies it was found that an increased production of proinflammatory cytokines occurred for both celiac patients as well as healthy controls, however the impact was greater for those with celiac disease. Studies have confirmed that gluten-sensitivity exists, and many who experience IBS have gluten sensitivity. Case Study: In a double-blind, randomized, placebo-controlled study on 34 patients with IBS and without celiac disease, it was found that those who followed the gluten-free diet experienced fewer IBS symptoms, pain, fatigue, and bloating as compared with those who consumed the gluten diet. ● 34 patients ● 6 weeks of a gluten-free diet with exception of two bread slices and one muffin per day. Either with gluten or gluten-free ● The mechanism was not discovered as tests did not generate significant differences between the groups, however the reported symptoms were significantly less for those without gluten. If you have sensitivity towards gluten, it is a good idea to replace grains with starchy vegetables, such as sweet potatoes and beets. For everyone, it is a good idea to cut grains out for a week and reintroduce them one at a time to see if you have any sensitivity. This protein made up of the peptides gliadin and glutenin is found in grains such as wheat, semolina, rye and barley. It's known for giving bread its airy and fluffy substance and dough its sticky texture. But recently it's become notorious for sending dieters, restaurateurs, and the medical community into a tailspin. Why? Because every time you eat a Cronut or a turkey sandwich, your body either decides to break the gluten down and absorb it, or produce antibodies to attack it. The latter is known as celiac disease, and to a lesser extent, non-celiac gluten sensitivity. Avoiding gluten completely is, as of now, the only known treatment to help heal these conditions. But what about the rest of us who haven't been diagnosed? What really happens to the body when you give up gluten? Hi guys! I've got very serious about sorting out my health (including my blood sugar) once and for all in the last month, which means I went on a couple of elimination diets. I wanted to see why on some days I feel great and on others I struggle to get up and do things. My energy or moods aren't consistent like they should be. My skin isn't perfectly clear either: I get a spot or two here and there and I needed to find the reason why. I just had this gut feeling that there was something bothering my body., something that I haven't uncovered yet. More precisely, it's something I eat! Going on an elimination diet is the most accurate way to test for food sensitivities. It's time consuming and challenging, but it's super informative. Many months ago, I tried to go gluten-free for 60 days, which then was followed by 3 weeks dairy-free. But I saw no results... Why? Because it turns out I'm sensitive to both, so I could only see results if I eliminated both, gluten and dairy. I've also always felt that fruit was bothering me, but I wasn't sure and i didn't know what it was (even in one of my first ever videos about how I cleared my acne I mentioned fruit causing me troubles). It turns out I also have something called Fructose Malabsorption. Fun! But at least I have a bit more clarity in my life now. Talking about acne, my skin is pretty clear most of the time, but I'm able to bring my acne back full force (from 0 spots to 7 huge whiteheads) in one night. Guess how? By eating cheese, especially mature. It's a concentrated source of casein and a lot of us are sensitive to it. I was shocked when I looked at the mirror the morning after reintroducing dairy and so those 7 giant whiteheads staring back at me and winking. So if you have acne, I'd definitely try to go on a dairy free and gluten free diet for at least a few weeks. You will be surprised, I promise. And if you aren't, at least you will have tried to eliminate one of the most common (if not the most common) causes of acne. Grease a muffin tin with oil or cooking spray. In a large measuring cup, whisk eggs, milk, garlic powder, salt and pepper. Set aside. Fill each muffin cup with chopped spinach, tomatoes and goat cheese. Pour egg mixture into each muffin cup. Bake for 15-20 minutes or until they are completely set. This recipe makes 6 frittatas. You could double it to make a dozen. Enjoy! Potato Rosti 1 sweet potato, peeled and grated 2 yellow potatoes, peeled and grated 1 tbsp olive oil ½ tsp garlic powder salt and pepper sour cream and chives for garnish Preheat oven to 375°F. Grease a muffin tin with oil or cooking spray. Using a kitchen towel or cheesecloth, drain the excess water from the potatoes. In a large bowl, mix potatoes with olive oil, garlic powder, salt and pepper. Press potato mixture into each muffin cup created a small reservoirin the centre. Bake for 30-40 minutes or until they reached your desired crispness. Top with sour cream and chives. This recipe makes 6 rostis. You could double it to make a dozen. Enjoy! Almond Breakfast Bites 1½ cups almonds ½ cup sunflower seeds ¼ cup raisins ¼ cup cranberries ½ cup almond butter ¼ cup honey Line a muffin tin with cupcake liners. In your food processor pulse almonds and sunflower seeds until they become coarse crumbs. In a small saucepan or in the microwave, heat almond butter and honey until they are smooth and easy to pour. In a large mixing bowl, combine almond mixture, raisins, cranberries and almond butter mixture. Use your hands to mix everything thoroughly. Press mixture into each muffin cup. Then, what exactly is gluten? It’s the mixture of proteins that are specifically found in the formation of grains such wheat, rye, and barley. Because many foods are made from these grains, including healthy foods such as cereal bars, gluten is widely found in our food chain. Knowing that gluten is, is an important step in improving your quality of life; however, some of the symptoms of a gluten allergy or intolerance are so common that many people don’t even realize they are allergic or intolerant to gluten. Besides that, few people know the name associated with gluten intolerance, and are therefore unable to seek treatment or change their eating habits. Have you ever heard of Celiac Disease? This sickness is an autoimmune condition that affects people with hypersensitivity to gluten. Let’s learn about the ten most common symptoms related to a gluten allergy, in order to understand the best way to create a routine to avoid gluten. 1. Digestive problems Slow digestion or indigestion is one of the main symptoms of gluten intolerance and/or Celiac Disease. It’s important to be especially alert to constant flatulence, stomach pain, bloating, and diarrhea. 2. Headache One sign of possible gluten intolerance is chronic headaches, especially after eating anything with gluten in it. This is not a symptom closely linked to Celiac Disease, but it is a good indication of whether you are intolerant to gluten. Try to pay attention whether or not the pain starts after eating foods with gluten. 3. Chronic Weakness Constant fatigue, without having performed any physical exercise, is a strong indication of gluten intolerance as well as for Celiac Disease. 4. Mental Confusion Gluten intolerance can cause confusion, dizziness, and difficulty concentrating. Be aware, as these are also symptoms associated with fatigue, stress or aging. 5. Joint Pain Gluten intolerance causes inflammation in various parts of the body, especially in the joints. 6. Immune System Problems Immune system failures can be consequences of a gluten intolerance. With Celiac Disease, the clearest symptom is anemia, which also damages the immune system. 7. Depression Gluten intolerance is also harmful to people who have depression because it intensifies the symptoms of anxiety, irritability, and sudden mood swings. 8. Skin Lesions For people who have Celiac Disease, skin lesions such as rashes, eczema, psoriasis and others, are very clear symptoms of the disease. These symptoms also appear in people with a gluten intolerance, but to a lesser degree. 9. Tooth Decay When the person has a gluten intolerance, the teeth are weakened and there is a greater chance of cavities. 10. Hormonal Disorders Hormones can also be severely affected in people with an intolerance to gluten. In cases of Celiac Disease, a very rapid increase or decrease in weight may be symptomatic of estrogen levels which are out of control. So periodic hormone-level tests are very important. What to do if you have Celiac Disease and/or gluten intolerance? If you notice more than one of these symptoms in your daily routine, the first step is to pay a visit to your doctor and ask him to order multiple tests. Ask specifically for him to run the test for Celiac Disease. After diagnosis, be prepared to eliminate gluten from your daily diet. If the symptoms are extremely bothersome, you can also do a simple test: Eat a gluten-free diet for a while and check for improvement in your condition. If you feel better, just confirm the diagnosis with the doctor so you can continue your treatment. I'm going to give you an unbiased review, and I'm going to look at different things. I'm not just going to look at the cholesterol side of things, I want to look at omega profiles, I want to look at sulfur, I want to look at glutathione. I want to talk about the egg diet in a different light, and help you understand truly what it is. This is completely unbiased. I don't do the egg diet. Anyhow, if you don't follow me already, my name's Thomas DeLauer. Go ahead and hit that subscribe button if you want to get three to five awesome nutrition and workout coaching videos per week. If you are already a follower, make sure you turn on those notifications so you never miss a video. All right, so first off, what the heck is the egg diet? I'll give you my first off honest impression of the egg diet. It's something that's been sort of manufactured to piggy-back off of the keto diet. People are seeing that the keto diet is successful, and that it's getting popular, so people are starting to make different spinoffs with the same general underlying principles. Ultimately, the egg diet is more of a mono-diet. It's where you really focus on eggs as your primary source of fuel, if not your only source of fuel. Some people eating upwards of two dozen eggs per day, you can pretty darn aggressive. The whole idea here is that eggs supposedly have the abundant nutrient profile that you need to survive, and the perfect ratio of fats to protein. Some of that I'm not going to argue with, okay? If you have really truly good quality eggs, you can get a nice nutrient profile from them, and sure, the fat to protein ratio is quite nice, and supports a general ketogenic lifestyle, but there are some other things that we really have to look at. First off, it's never good to get your food from just one source. What's going to happen is your body's ultimately going to start to develop antibodies to it, and it's going to happen very fast. As we start to consume something over, and over, and over again, our bodies do start to create antibodies to it. It does start to create a reaction, basing specific IGE, and IGG responses within the body. These IGG responses make it so that your body signals an immune attack whenever you're eating this food in the future. This is the same kind of thing that happens with gluten intolerance. For example, back in the 1950s, we didn't have much of an issue with gluten, believe it or not. Nowadays, we have an issue with gluten. It's not so much that gluten has changed a whole lot, it's more so that we have over consumed wheat to the point where we're developing antibodies to it. Well this happens at a smaller scale, very aggressively, and very fast if you consume the same food, especially only that food. But let's talk about something different. I want to talk more so about the omega profile, omega-3s versus omega-6s. Eggs are generally about 1% omega-3, and over 14% omega-6. Now you might hear the word omega and automatically think that it's a good thing, but here's the thing, omega-6s are not good in high amounts, not good at all. In fact, very, very detrimental, so much so that there are multiple studies that link omega-6s with inflammation, and terrible conditions within the body. What's the problem, why can't we just modulate that omega-6 with something else? Well, here's the thing, we need to be in equal balance of omega-3, and omega-6s. If we're consistently consuming a food that is higher in omega-6s, than the omega-3s, it's skewing that balance in our body. What exactly happens with omega-6s then? Omega-6s are what are called a pro-inflammatory fat. It is literally their job to signal inflammation at specific periods of time. Omega-6s help support the immune system. Chew food thoroughly, and relax when you do it: avoid distractions such as the computer or work. The cleanup stages include removing processed foods from your diet, and focusing on wholesome meals such as fresh produce and dishes prepared at home. Exercise, avoiding negative people, and enjoying life will provide long-term health. If you aggravate your body any time during any of the stages, back off the diet and ease into the restrictions or additions over time. Stage 1: The MEVY Diet The MEVY stands for: Meat, Eggs, Vegetables, and Yogurt. During this stage, remove any remaining traces of processed food in your kitchen. Any cans, bottles, and other items that have been around for weeks, even days, should be thrown out. Avoid white sugar, white flour, sodas, alcohol, and even candy and chocolate. A good strategy is to go to farmer's markets to find fresher, locally grown food, or even grow your own to ensure chemical and spray-free produce. If you do shop at a grocery store, go around the walls where produce, meats, and other wholesome ingredients are: avoid the aisles with prepackaged items. Avoid sugars, especially hidden in different sauces, as they are candida foods. Salt should also be avoided as excessive amounts deplete the body of vital nutrients. To know what vegetables and fruits to eat, stock your pantry with deep, green options. Visit YeastInfection.org for a more comprehensive list on the best foods to have. When on the MEVY diet for the first three or four weeks, avoid squash and other high carbohydrate items, and items such as sweet corn that contain sugars. This includes pumpkins, zucchini, and similar vegetables. If you have a mild candida infection, these foods may be okay in moderate amounts. The diet itself can last from two weeks up to three months. Avoid dried fruits, fruit juices, and certain fresh fruits. Blueberries, avocados, green apples, and pomegranates are acceptable, but avoid sweet fruits as they are high in sugar. Mix up the food you consume on a daily basis. A variety of foods can help the immune system and digestive tract. Meat and eggs that are antibiotic and chemical free are strong considerations for the candida diet to get a good source of amino acids and proteins. Processed meats and any pig lack in nutrition for the body and can upset the digestive tract from cleansing the body of yeast . If you become constipated, back away from meat and incorporate more vegetables into your anti-candida diet plan. Stage 2: Low Allergy Phase After the MEVY diet has improved digestion, begin taking out dairy (except small amounts of unsweetened, plain yogurt or kefir, unsalted butter and small amounts of mozzarella and parmesan), and allergenic fruits that include oranges and any similar relatives (lemons and limes are okay), bananas, and pineapple. Remove stevia and xylitol if you have extreme candida for at least one month. Stage 3: Food Reimplementation This final portion is for reintroducing foods to build up to a normal diet. Write down any foods you used to have and enjoyed, no matter how unhealthy they were. Rate the foods on a 1-3 scale: 1 being the lowest preferred foods, with a 3 being foods you absolutely love. Begin with category 1 and introduce two foods at a time over a two to four week period. Note any candida symptoms and back away from those foods should they appear. The gluten-free diet; This is an approach for people who may be gluten intolerant, or who suffer from a chronic condition, Celiax Disease. What it does is it causes an inflamation in the lining of the stomach that can produce dehabilitating symptoms. Gluten is a protien that can be found in barley, wheat and rye, and what it does is, once ingested it can cause inflammation or slight gastro-intestinal discomfort, such as bloating or gassiness. lose 5 kgs in a month with gluten free indian chapati/roti. this 100% gluten free multigrain roti/flatbread is easy to make and helps in weight loss and weight management. the gluten free flour mix can be easily made at home and stored for up to a month and this gluten free flour can be included in diabetic diet. I have used tapioca flour also known as tapioca starch in this recipe to help make this gluten free roti super soft and tasty. You can also use arrowroot powder instead of tapioca flour. Having just two gluten free rotis will make you feel fuller as they are rich in fibre, vitamins, and minerals. These rotis will also help to keep your energy up and also helps to stay warm in the winter. Winter diet for weight loss can be made nutrient dense with this weight loss roti. Ingredients: Homemade multigrain gluten free mix: 3/4 cup (check below for the recipe link) Tapioca flour/Arrowroot powder/flour: 1/4 cup Hot water: 1/2 cup plus 1 tbsp Pink Himalayan salt as needed 1/4 tsp desi ghee on each roti, do not skip desi ghee as desi ghee helps in the absorption of vitamins and minerals, especially vitamins like A, E, D, K. ------ Add gluten free flour mix and tapioca flour mix into a bowl along with salt. Mix well and then add in the hot water little by little and mix well with a wooden spoon. Allow it to cool down. Transfer the cooled dough to a work surface and knead to a soft dough dusting with the gluten free flour mix. Pinch of lemon sized balls from the dough and make rotis as shown in the video.
