You have to go out of your way to buy raw organic cheese and it’s expensive, around $30 a pound and up, so if you are not sure if your cheese is high quality, organic, or raw, then it’s not. Organic The reason you should always buy cheese organic is that fat carries the largest doses of the hormones and antibiotics that are used in non-organic livestock. Organic grass-fed cheese is free of antibiotics and growth hormones. And Non-organic most often has gmo’s in it. Rennet An ingredient in cheese called Rennet is an enzyme used to turn milk into curd for cheese making. There are two types of rennet that are commonly used. 1. Is animal rennet which is traditionally used and it’s taken from calfs, yes baby cows since you can’t get this from adult cows, so if you wouldn’t eat veal because of the abuse of animals such as taking away baby cows from their mother and killing them, or you are vegetarian, than don’t eat cheese. But most cheese especially in the US from: 2. Vegetable or fermented rennet. Most vegetable and all fermented or FPC rennet is genetically modified or GMO this is illegal in cheeses sold in Europe, but is legal in the US. If you want to avoid the abuse of animal situation, then avoid it all together or else look for organic cheese from vegetable rennet. Food Combining Another a big cause of stomach issues having to do with cheese is poor food combining. Mixing cheese with meat or cheese with starch like pasta is bad food combining since meat, dairy and starch are digested in different areas of the body with different enzymes so this can cause gas, bloating acid reflux and other digestive problems leading to sickness or disease. You brush, floss, and maybe do a quick rinse with mouthwash a few times a day. You wouldn't dream of ordering garlic bread on a first date, and you always pop a stick of sugar-free gum shortly after downing your morning coffee. But let's say you do all those things, yet your breath still stinks. That's the case more often than you might think, as poor oral hygiene is not the most common cause of bad breath. Most chronic bad breath is actually due to dry mouth: When you don't have enough moisture, the bacteria that live in your mouth thrive. When you sleep at night there's little or no saliva production. That's what causes dryness and morning breath. If morning breath is your only issue, you don't really have a problem. But many people have dry mouth that lingers all day, often thanks to a medication they're taking. Seventy-five percent of prescription drugs, including antidepressants, antihistamines, and blood pressure drugs, have dry mouth as a side effect. So if you find people frequently backing away when you're talking, ask your doc if your meds might be to blame. In other instances, chronic bad breath could signal that something is amiss elsewhere in your body. And—believe it or not—the specific scent may provide clues that can help your doctor or dentist figure out what's wrong. If your breath smells like mothballs... I’m not going to throw dairy under the bus with a blanket statement that it’s all bad, yet I do think it’s possible that some people should avoid it for health reasons. **The Question Stephanie L. asks: "I keep going back and forth on dairy, having read The Untold Story of Milk by Ron Schmid a few years ago. I know that raw milk is good for you, but so many of the health summits I’ve listened to online the past couple years repeatedly state for optimal health, “get off sugar, gluten, dairy, etc…” Can dairy truly benefit us? Having read a little from the Fermentation purchase I made last year, maybe we could overcome that." ** My Answer: Yes, Raw Dairy Is Good For You*! Those health researchers are mostly speaking to the general public who are consuming conventional dairy. Ok, yes, maybe in some cases, they’re speaking to an audience that is consuming raw dairy (or fermented raw dairy like yogurt or kefir). Unfortunately, they don’t qualify their statements as whether they’re referring to conventional or artisan dairy. So, I take their recommendations with a grain of salt. Because… if they are talking about conventional dairy, they’re absolutely right. Conventional dairy should be avoided as much as possible. It’s no longer a real food! The animals are raised in abhorrent, sick conditions; the milk is often laced with pesticides, GMOs, antibiotics, and hormones. Then, it’s pasteurized and/or homogenized. This destroys enzymes, probiotics, and vitamins — it’s totally denatured. On the other hand, raw dairy — especially pasture-raised raw dairy — is abundant with probiotics and enzymes. The notable enzyme is lactase, which is essential for digesting the milk sugar (lactose). Pasture-raised dairy, from animals that are healthfully feasting on rapidly growing green grass, is also rich with healthy saturated fats, Omega-3s, and the fat-soluble vitamins A, D and K2. **When Should Raw Dairy Be Avoided? Although I’m not a doctor and can’t give medical advice, I know of some situations where people are advised to avoid dairy (even raw) for good reasons. Perhaps the individual is trying to heal the gut… Lactose (milk sugar) feeds undesirable organisms and therefore should be avoided completely. Fermented raw dairy, however, with lactose reduced 100% — such as 24-hour yogurt or kefir — might be fine to introduce! Therefore, to heal and reduce irritation, that person avoids milk and dairy. Often, lactose-intolerant individuals are able to consume raw dairy because it “comes with” lactase, the enzyme required to digest it. This lactase is destroyed during pasteurization, yet abundant in raw milk. Or, if this person still has trouble with even raw milk, they could add these lactase drops to raw milk. This is an infection that is found worldwide especially in developing countries where poor sanitation and contaminated water sources are prevalent issues. Now it can affect people of all age groups, but is seen more commonly in children. How infection occurs? How does this infection occur? Now, the parasite exists in two forms, what we call the trophozoites and the cysts. The cysts are infectious forms as they have a protective shell and when they are shed in the stools of an infected individual or animal., they can survive for a long period of time out of the body in soil, water and food. The trophozoites are released from the cysts upon ingestion where they invade the intestine and produce the symptoms of giardiasis. Considering their ability to survive out of the body, they can be spread by water contamination, food contamination and person to person transmission. Transmission via water and food Now, the transmission via water can happen when the sources of water contaminated by the feces of infected people or animals can be lakes and streams where campers and hikers may consume it, municipal water supply, which is inadequately sanitized or contaminated with sewage, swimming pools and recreational water parks where there is accidental adulteration by people with diarrhea or babies in diapers, some well water in rural and lower socioeconomic areas which are improperly stored and untreated. Now, in the transmitted via food - when there is consumption of improperly cooked food, which may not destroy the parasite if present, ready to eat raw food which is washed with contaminated water or if the food is handled by an infected person especially with improperly washed hands. Other may show some of the following symptoms anywhere between 1-4 weeks after ingestion of the cysts. The symptoms include - stools can be bulky, greasy, frothy and foul smelling, there can be episodes of watery diarrhea with abdominal pain, there can be abdominal distension and gaseousness, there can be loss of appetite, there can also be lactose intolerance and malabsorption which can lead to weight loss, anemia and failure to thrive. Diagnosis Diagnosis can be made by examining the stool sample, preferably a fresh sample, for ova and parasite, but it may be difficult to pick up in a single sample, and hence your doctor may advise you to give 3 samples in 3 different days. If your child has symptoms of giardiasis and it is not evident on stool test, then further investigations may be recommended like an endoscopy. Treatment Your doctor may prescribe an antibiotic for symptomatic patients and for those who are not symptomatic but are at risk for transmission like day care workers, food handlers etc. Depending on the type of antibiotic or antiparisitic prescribed, it may be taken either as a single dose or for 5-7 days. Now, dehydration and electrolyte imbalance should be corrected using measures as we have mentioned in the topic of “gastroenteritis and dehydration”.
