Cheese Cheese does not contain any carbohydrates, with the exception of cottage cheese and ricotta cheese, which contain small amounts, or about 3 to 4 g per 1/2 cup serving. Cheese is a good source of protein and calcium. Cheese makes a great snack that won't raise your blood sugar levels and is a good way to add extra protein to your breakfast. 3. Olive Oil Olive oil is a good source of heart-friendly monounsaturated fats, which constitute the cornerstone of the Mediterranean diet. Olive oil does not contain carbohydrates and will not directly influence your blood sugar levels. Use regular olive oil for cooking your vegetables and protein and select extra-virgin olive oil for drizzling over your salad. 4. Meat, Poultry and Fish A healthy diabetes meal plan should include an adequate source of protein at each of your meals. Lean meat and poultry constitute good low-fat options, while fish, eaten two to three times a week, can provide you with the omega-3 fatty acids your body needs to stay healthy and to prevent cardiovascular diseases. These protein sources are free of carbohydrates if you avoid the ones that are breaded or served in a sweet sauce. 5. Nuts and Nut Butter Nuts contain small amounts of carbohydrates, most of them being fiber, and therefore have a modest effect over your blood sugar levels. Cashews are the starchiest of all nuts and are not the best options with about 9 g of carbohydrates per ounce. Stick to other nuts and limit your serving size to about 1 oz., or 1 to 2 tbsp. in the case of nut butter to avoid affecting your blood sugar levels. Avoid sugar-coated nuts and select natural unsweetened nut butter. 6. Nonstarchy Vegetables Nonstarchy vegetables contain small amounts of carbohydrates, but most of these carbohydrates are fiber, which explains why they have little impact over your diabetes control. A diet rich in nonstarchy vegetables can actually help you better manage your blood sugar levels. Include broccoli, leafy greens, tomatoes, Brussels sprouts, turnips, cauliflower, bok choy, onions, mushrooms or asparagus at most of your meals to boost your fiber and antioxidant intake without compromising your blood sugars.

Amber sent in the recipe for Diabetic Lemon Chicken and I changed it up a little bit and added Rosemary to it which I had never used before. It was Perfect!! Recipe: Ingredients 2 lemons juiced 1/4 cup reduced sodium soy sauce 1 clove garlic,minced or 1 tsp of garlic powder 1 tsp of onion powder 1 teaspoon salt 1 teaspoon ginger 1 teaspoon pepper 1 Whole Chicken cut up with skin removed off thighs & breast Mix all the ingredients together. Pour over the chicken and set in the refrigerator for 1 hour turning the chicken after 30 minutes Drain and discard the marinade. Transfer the chicken to a shallow roasting pan coated with EVOO Bake at 400 degrees for 1 hour. I appreciate your comments and concerns and once again want to clarify that i undertook this small project, researching reputable sites, and acknowledged that i am not medically trained. I can however say that many diabetics suffer their diabetes differently. My husband WAS a Type 2 Diabetic but due to calorie control, cutting back on high processed carbs/sugars and a little bit of walking has managed after 10 years to come off his insulin and is now classified by his specialist as a NON DIABETIC. Many of you are pushing alternative treatments, selling products etc that I do not and cannot recommend through this YouTube clip. Please respect each other's views and use this clip as a guide and not as gospel. Do some research of your own and take control of your health. All the best. Liz :)

As a part of a project for my fourth year in Medical School, I set out to create a cooking video oriented towards the diabetic population. Ingredients: One 7 --pound roasting chicken 4 Tablespoons Unsalted butter Salt and Freshly Ground pepper 3 Medium Carrots (Chopped) Two sweet Onions (Chopped) One bell pepper (Chopped) One Head of Cabbage (Quartered) Two Zuchini (Chopped) Three Yellow Squash (Chopped) Eight Oz. Button Mushrooms (Chopped) ½ Cup Low Sodium Chicken Stock 4 Rosemerry Sprigs (Finely Chopped) 8 Thyme Sprigs (Finely Chopped) Instructions: 1) Preheat oven to 400 degrees 2) Brush Chicken with unsalted butter and sprinkle with salt/pepper. 3) In large bowl, combine carrots, onion, pepper, squash, zucchini, mushrooms, and cabbage. Toss with melted butter. 4) Place Chicken in pan with tossed veggies, pour in chicken stock, and sprinkle with herbs 5) Roast for 1.5 -- 2 hours, stirring vegetables occasionally, until chicken is golden brown

Diabetes is a terrible disease and its even more painful when your 4 year old son is diagnosed as a type 1 diabetic. Since that day our family has vowed to eat cautiously. Due to our lifestyle change, we began serious research whether on the internet or by asking other knowledgeable people. During this time, we were able to find diabetic friendly food for our type 1 diabetic that allowed him to eat wonderful foods and not have spikes in his blood sugar or A1C. All the ingredients in this diabetic friendly soup are organic with no chemicals or additives. Its very important for diabetics to not have excess chemicals like those used for food preservatives, thickening agents, gluten or wheat, hormones. As a rule, I only use free range chickens and turkey with no hormones. Also, anything with soy or dairy is avoided completely (so no cheese). Our diabetic son does not use insulin and instead uses a combination of whole foods, managing sugar intake, eating and making healthy food choices, and exercise.
