If you are ONLY eating one a day with your other meals, you have options. 1. Cut the recipe in half, or 2. Put 4 meals in the freezer and 3 meals in the fridge. 3. Take one out the night before and keep in the fridge to thaw. 4. Store the yogurt sauce in the fridge and add on after you've reheated. If you are going to freeze meals put yogurt in a separate container and place in the fridge then add on once it's been reheated! ------------------ ------------------ BROCCOLI MIND BLOWING TRUTH BOMB: The idea that steaming broccoli is better for you is a common misconception. Several studies have shown that while cooking can degrade some nutrients, it can enhance the availability of others. As a result, no single cooking or preparation method is superior for preserving 100 percent of the nutrients in a vegetable, and that includes eating vegetables raw. Boiling has been found to be better for carrots, zucchini and broccoli, than steaming, frying or serving them raw. Since the best vegetables are the ones you will actually eat, taste should be the defining factor when you decide on a cooking method. The best way to get the most out of your vegetables is to enjoy them a variety of ways -- raw, steamed, boiled, baked and grilled. Lacking consistency with your nutrition is the fastest way to fall out of shape, especially when you get hit with any of life’s surprises. All too often, it may seem that life gets in the way of you and your six pack. I get it, I understand. But if you are going to let that cave in your health, you will likely not be healthy enough to help those that need you the most. In this video, I reveal a few things going on in my personal life that would normally make it impossible for me to get my workouts in, eat healthy and maintain a healthy lifestyle. That said, I understand that I must be strong if I am going to be able to be strong for those that need me. Sure, it requires me to get up earlier than I would like to. It requires me to workout with less equipment than I would normally like to. It requires me to train with less time than I would normally allot. But I still get the job done. My meal plan prep relies on finding ways to manage the three choices that we all have, those being good, fast and cheap. If you want anything in life you must realize that you can only choose two of these options. I chose good and fast, at the expense of cheap. By using the catering menu at local health food grocery stores however, you will be surprised at just how much money you can save over the normally priced healthy food options. For instance, if you shop at Whole Foods you can buy a great meal that includes grilled fish or chicken, asparagus, sweet potatoes and grilled veggies. You will likely pay a pretty penny to have that though. On the other hand, if you hit the less publicized catering menu you can order your already prepared healthy food in bulk. Don’t worry if you can’t eat it all in one sitting, after all it’s bought in bulk, you shouldn’t be eating it all at once! Realize that you can freeze pretty much any of it without sacrificing it’s quality or freshness. Almost every cooked food can be frozen (some with differing times). Refer to any online resource to determine how long your favorite foods can be frozen and you’ll be surprised at just how much more flexible your meal plan prep can become in even the toughest and tightest of times. To sum it up, basically I talk about my inability to successfully implement meal planning, like all the Pinterest moms. I blame it on my personality type. I threw away the dry erase board, homemaking binder and recipes, and just started cooking real food. As a follow up to that post, I wanted to share a real honest look at what that looks like here in the farmhouse. No lists, no recipes, no plan, seven dinners. Here is what we eat in a week. Winter edition. What We Eat in a Week- Easy Healthy Meal Ideas for Family Night One I threw a whole chicken in a 9 by 13 pan, topped it with melted coconut oil, salt, pepper and Italian seasonings. I put it, along with some whole sweet potatoes on the top rack, in a 400 degree oven for about an hour.  When they were soft, I removed the sweet potatoes from the peels, topped them with butter and salt. Zucchini sautéed in butter and sauerkraut round out the sides.  Night Two I seasoned a couple pounds ground beef with about a teaspoon of almost every spice in my cabinet. Seriously, I have no idea the ratios and combinations of seasonings, but I have done this several times and the end product always tastes like sausage. I scrambled up about a dozen eggs with some cream and tossed in chopped green peppers and onions. I topped it with some shredded cheese and shredded potatoes and baked it in a 350 degree oven until it was cooked through.  Night Three We had crispy salmon burgers with steamed carrots, broccoli and sauerkraut. To make it, I just smashed a couple cans of salmon with eggs, salt, pepper, chopped onions and coconut flour. I fried it up in my cast iron skillet with a little coconut oil. Night Four We had potato soup. I simmered some potatoes, onions and fresh garlic with bone broth. I used the chicken bones to make bone broth in the Instant Pot.  Night Five I made up a skillet dinner with sautéed carrots, zucchini and onions. I threw in some quinoa, cooked in bone broth, leftover chicken, scrambled eggs and coconut aminos. Sometimes I add a little ground ginger but I didn't have any.  Night Six We had meatloaf, crispy potatoes, green beans and sauerkraut. I made the meatloaf in the same way as the salmon burgers, with eggs, chopped onions, salt, pepper and coconut flour.  I even snuck in some leftover sweet potatoes. ;) Night Seven I forgot to thaw my meat in the fridge, which is basically the most important tip in my 5 Tips for Healthy Meals Every Night Without Planning. Whoops! But even with this recklessness, all is not lost. I threw a frozen solid chicken in the Instant Pot for an hour. I removed it from the bone and tossed it in the cast iron skillet with butter and seasonings, to flavor it up a bit. I made a little avocado dressing with avocados, apple cider vinegar, milk kefir, garlic, Italian seasoning, salt and pepper. This is the winter edition of what we eat in the farmhouse. I always focus on what is in season or on sale. Sweet patato bhujia - Shakarkhandi Ki bhujia - Ingredients- * Onion - 1 medium - chopped * Oil - 1 tablespoons * Sweet potatoes / - cut in cubed - 2 cups * Salt - 1/2 teaspoon * Red chilli flakes - 1/2 teaspoon * Chat Masala - 1/2 teaspoon * Tomatoes - 2 medium- chopped * Green chillies - 1-3 - chopped * Coriander leaves - 2 tablespoons * Capsicum - 1/2 cup - chopped * Ginger and garlic paste - 1 tablespoon * Black pepper powder- 1/2 teaspoon * Cumin powder - 1/4 teaspoon * Garam masala powder - 1/4 teaspoon * Method is described in a video Strawberry ice cream / popsicles Ingredients- * Strawberries- 2 cups - chopped - frozen or fresh * Curd - 1 cup - heaped * Vanilla powder or essence- 1/2 teaspoon * Honey- 3 to 4 tablespoons * Blend all things and freeze in an airtight container for 12 hours or make popsicles. Red kidney bean salad in a jar - Ingredients- For Dressing- ( makes 1 cup of dressing ) * Olive oil - 1/4 cup * Honey - 1/2 cup * Lemon juice - 1/4 cup * Red chilli powder - 1 teaspoon * Salt and Pepper to taste Mix all things and keep in a fridge for later use. Baked blueberry pecan oatmeal for breakfast, Asian pesto curry for lunch and almond crusted parmesan tilapia for dinner… (I just made those titles up, by the way, but they really do all sound fabulous.) Just do a quick Pinterest search for “Paleo Recipes” and prepare to be overwhelmed. I love a good crispy coconut chicken with squash and parmesan fritters as much as the next person, but maybe for a Saturday night special dinner, or a night when I have a little extra time to spend in the kitchen… Which is pretty much never. I am a mom of four small kids! If you think you need to make Paleo safe coconut tortillas for every meal, that plan isn’t something sustainable . No wonder people limit their healthy eating attempts to 30 days. Eating real food can feel so overwhelming when we hold ourselves to these standards! What ever happened to good old fashioned meat, vegetables and herbs? Back when my grandma was a mother of young children, I imagine she cooked a whole chicken, baked potatoes and maybe served it all with a biscuit and canned jam. No fancy recipes. Just real food. Meal planning stresses me out, my friends. If you have a Type A personality, and thrive in environments with plans and rigid structure, you should probably stop reading this post now. I think meal planning is a fabulous option for you. I am NOT against meal planning. I am talking to the moms who actually feel burdened and stressed by the idea. I tried meal planning. Really, I did. I sat there for hours, on Pinterest, with my pen and notepad in hand, one night per week. I sifted through as many popular healthy eating boards as I could find. I wound up with an almost full bottle of rice vinegar, half a can of tomato paste and rotting herbs all stashed in the back of my fridge. Ok I don’t remember exactly what happened, but I know I ended up buying a bunch of crap I don’t normally use, just so I could follow the recipes. I like the freedom and creativity that not having a plan allows for me. I can fill up my cart “on a whim” with organic peppers, when I see the store has them on sale for $1.99. When chanterelle mushrooms are in season, and we forage a grocery sack full, I want to incorporate them into everything. If 13 dozen organic eggs are marked down, because they are about to expire, I am going to snag them up, and throw the meal plan out the window on the way home. Egg salad, anyone? In the summer we eat lots of tomatoes, cucumbers and zucchini, because I find them cheap at the local produce stand. Would you believe I also go to the store without a list? *Gasp* And, trust me, its not as reckless as it sounds. I will share with you my 5 tips for having healthy meals every night without a plan. 1. Always have meat thawing in the refrigerator. I keep a glass 9 X 13 pan in the fridge for thawing meat. When I only have a few dinners worth of thawed meat in it, I will restock it with a whole chicken, two pounds of ground beef and a couple of steaks. If you have meat thawed out, you are less than an hour from a meal at all times. Is throwing a whole chicken and five sweet potatoes in the oven really that much harder than throwing a pre-made pizza in? 2. Do a little prep work when you have extra time. If you’re a person who likes to ferment things, like me, spending some time on a Saturday to make up a few gallons of sauerkraut, will reward you richly in having a side dish ready to go. It's been a while so I thought I'd do a quick Costco grocery haul and meal plan video for you guys. I walk you through everything I bought at the grocery store, what it cost, and what I plan to make with it! I aim to cook healthy delicious meals for my family. This means I avoid a lot of processed foods and buy a lot of organic produce. But healthy eating doesn't have to break the bank. You can create budget friendly meals for your family that taste good and are fairly easy on your wallet. Because we like to give a transparent view of what we do, this haul includes the non-grocery items that were on our budget, how much the cost, and what we plan to do with them. That way, when you see those things later on in the channel (like when we do our Egg Nog Make-a-thon, you will know exactly what the supplies cost us). Since this turkey was free with the purchase of $100 at Winco back at Thanksgiving (or was it the one the husband's work gave us?) this meal cost me the package of frozen broccoli which is around $1.00 for a family of 4 for 3-4 meals! $1.50 if I added brown rice later! We spent zero dollars on groceries this week! ❤️ 💰 This meal is appropriate for trim healthy mamas for s (low carb), e (low fat and add brown rice) or fp (low fat and low carb) all depending on how much oil you decide to use.
