Gluten is part of our daily lives, due to the large number of foods that contain gluten that we eat every day. We do this without realizing how much gluten we are ingesting. Breads, cakes, pizza, pastas, cookies, and biscuits all contain gluten—and there are many more also. Without a doubt foods that contain gluten are among the most consumed foods all over the world. I mean, who doesn’t like pasta, right? Meanwhile a lot of people are allergic or intolerant to gluten without realizing it. Few people know what gluten really is and where it’s found. Then, what exactly is gluten? It’s the mixture of proteins that are specifically found in the formation of grains such wheat, rye, and barley. Because many foods are made from these grains, including healthy foods such as cereal bars, gluten is widely found in our food chain. Knowing that gluten is, is an important step in improving your quality of life; however, some of the symptoms of a gluten allergy or intolerance are so common that many people don’t even realize they are allergic or intolerant to gluten. Besides that, few people know the name associated with gluten intolerance, and are therefore unable to seek treatment or change their eating habits. Have you ever heard of Celiac Disease? This sickness is an autoimmune condition that affects people with hypersensitivity to gluten. Let’s learn about the ten most common symptoms related to a gluten allergy, in order to understand the best way to create a routine to avoid gluten. 1. Digestive problems Slow digestion or indigestion is one of the main symptoms of gluten intolerance and/or Celiac Disease. It’s important to be especially alert to constant flatulence, stomach pain, bloating, and diarrhea. 2. Headache One sign of possible gluten intolerance is chronic headaches, especially after eating anything with gluten in it. This is not a symptom closely linked to Celiac Disease, but it is a good indication of whether you are intolerant to gluten. Try to pay attention whether or not the pain starts after eating foods with gluten. 3. Chronic Weakness Constant fatigue, without having performed any physical exercise, is a strong indication of gluten intolerance as well as for Celiac Disease. 4. Mental Confusion Gluten intolerance can cause confusion, dizziness, and difficulty concentrating. Be aware, as these are also symptoms associated with fatigue, stress or aging. 5. Joint Pain Gluten intolerance causes inflammation in various parts of the body, especially in the joints. 6. Immune System Problems Immune system failures can be consequences of a gluten intolerance. With Celiac Disease, the clearest symptom is anemia, which also damages the immune system. 7. Depression Gluten intolerance is also harmful to people who have depression because it intensifies the symptoms of anxiety, irritability, and sudden mood swings. 8. Skin Lesions For people who have Celiac Disease, skin lesions such as rashes, eczema, psoriasis and others, are very clear symptoms of the disease. These symptoms also appear in people with a gluten intolerance, but to a lesser degree. 9. Tooth Decay When the person has a gluten intolerance, the teeth are weakened and there is a greater chance of cavities. 10. Hormonal Disorders Hormones can also be severely affected in people with an intolerance to gluten. In cases of Celiac Disease, a very rapid increase or decrease in weight may be symptomatic of estrogen levels which are out of control. So periodic hormone-level tests are very important. What to do if you have Celiac Disease and/or gluten intolerance? If you notice more than one of these symptoms in your daily routine, the first step is to pay a visit to your doctor and ask him to order multiple tests. Ask specifically for him to run the test for Celiac Disease. After diagnosis, be prepared to eliminate gluten from your daily diet. If the symptoms are extremely bothersome, you can also do a simple test: Eat a gluten-free diet for a while and check for improvement in your condition. If you feel better, just confirm the diagnosis with the doctor so you can continue your treatment. Elephant Almond Cookies  - Vegan (egg & dairy free) & gluten free⎟ Delicaroom

▾ Open for recipe ▾ For 8 to 10 elephants, you'll need : • 50g almond flour (1.7 oz) • 40g rice flour (1.4 oz) • 25g raw sugar (0.9 oz) • 40g plant based milk • 4 leaves of red cabbage • 90g raw sugar (3.2 oz) • A few pinches of baking soda ▸ Take a bowl & put in the almond flour, rice flour & raw sugar (25g/0.9 oz) ▸ Mix & pour the milk. Take a piece of parchemin paper & your dough, sprinkle with flour & roll it out. ▸ Sprinkle a little more flour, put another sheet of parchemin paper on top & roll again until your dough feels like 5 to 6mm thick. ▸ Take the top sheet off. ▸ Place the cookie cutter, push it down, & grab a knife to get rid of the dough that is outside the cutter. ▸ Take any sort of tool with a round end to help pushing the dough out of the cutter. ▸ Repeat the process until you’re out of dough, & pop them in the oven at 350°F / 180°c for about 10 min. ▸ While it's cooking, place your 4 red cabbage leaves cut in large pieces on a pan with some water at medium heat. ▸ When the water is getting dark, take out the leaves & pour it in a bowl. ▸ When the blue is ready, take about 80% of your powdered sugar (Just put 90g/3.2oz of raw sugar in the blender if it's not powdered) & pour some coloring in it & mix gently. ▸ Add some rice flour here to get a color that’s more opaque. ▸ Put it in a pipping bag & start outlining your elephant & filing them in. ▸ When they're all filled in, leave in the fridge for 2 hours. ▸ With the 20% of powdered sugar left, make the lighter glaze to draw the ears & eye by adding 1 volume of coloring & 2 of water in the sugar left. Adjust thickness with rice flour. ▸ Leave them in the fridge so the glaze solidifies. Find our cookie cutter on Amazon or on Aliexpress & eBay by searching "elephant cookie cutter". http://delicaroom.com/elephant-almond-cookies ▸ If you have some small holes in the filling, just add more glaze, & use a knife or a cake flatener to get it even. ▸ If the glaze is getting too thick for you to use it, just pop it in the microwave for a few seconds. I’m using the popular “Wacky” or “crazy Cake" recipe which is known for no eggs, or dairy needed People back then ate this up during the great depression. The frosting is made out of soy, and its consistency was perfect and the same as regular buttercream For taste, I felt like the chocolate was moist and with the frosting it was even more perfect. Before making a cake be sure to clean and sanitize the area you’re working in, and your kitchen tools and bowls. Check all the ingredients in your ingredients. To make sure it doesn’t contain anything dairy, or eggs. Chocolate Cake 6 cups All-Purpose Flour 4 cups white sugar 2 teaspoons salt 1 tablespoon and 1 teaspoon baking soda 1 cup unsweetened cocoa powder 1-1/2 cups vegetable oil 1/4 cup distilled white vinegar 1 tablespoon and 1 teaspoon vanilla extract 4 cups cold water Makes one 8-inch cake, one 6-inch, and 19 cupcakes Dairy Free Frosting • 4 cups Earth Balance Buttery Sticks (Vegan) • 8 teaspoons vanilla extract • 12 cups of powdered sugar • A tiny bit of water Enough frosting to decorate the 8 inch and 6 inch cake (two tiers) and 19 cupcakes. Decorations: 2-3 small cans of dotted sprinkles Sticks, scrapbooking paper, letter stickers. baker's twine or thick string, hot glue gun.

Try some gluten free brownies here: https://www.youtube.com/watch?v=hQOF6gXq7Xc Here is a vegan frosting you can try: 1 1⁄2 cups confectioners' sugar 1-2 tablespoons vanilla-flavored soymilk 1⁄4 cup vegan butter, softened (or dairy free margarine) 1 teaspoon vanilla extract Blend the margarine and sugar together. Add in the vanilla extract and blend Add enough of the almond milk/soy milk to make a spreadable frosting. Makes enough to frost the cake in the video. Cake recipe: 1 1/2 cups flour 3 tbsp unsweetened cocoa powder 1 cup white sugar (Make sure you use a vegan variety of sugar, apparently some white sugar is whitened by having contact with charcoal made from cow bones) 1/2 tsp baking soda 1/2 tsp salt (I used Himalayan pink salt, that's why it looked strange). 1 tsp white vinegar 1 tsp vanilla extract 5 tbsp vegetable oil 1 cup water Prepare an 8x8" baking dish by greasing it well. I used non-stick aluminum foil and it worked very well. Combine the dry ingredients right in the baking dish. Make three depressions in the dry mixture, two small, one large. In one small depression pour in the vinegar, in the other small one the vanilla and in the large one, the oil. Pour the cup of water over all and stir until combined. Dig around in the corner so that there is no more dry stuff to be found. Bake at 350F for about 30 minutes until a toothpick inserted in the center comes out clean. I decided to try an experiment and made some gluten-free, egg-free, dairy-free (basically vegan) pancakes. I didn't think they would turn out this good, and my biggest concern was how to make pancakes without eggs. Even using egg replacers in the past didn't work out that well (I've tried before for my mom who has an egg allergy as well). This recipe turned out better than expected though! Thankfully I was adventurous enough to film it all. I've made them a few more times since, to make sure it wasn't beginner's luck, and the second batch was as good as the first. Grease a muffin tin with oil or cooking spray. In a large measuring cup, whisk eggs, milk, garlic powder, salt and pepper. Set aside. Fill each muffin cup with chopped spinach, tomatoes and goat cheese. Pour egg mixture into each muffin cup. Bake for 15-20 minutes or until they are completely set. This recipe makes 6 frittatas. You could double it to make a dozen. Enjoy! Potato Rosti 1 sweet potato, peeled and grated 2 yellow potatoes, peeled and grated 1 tbsp olive oil ½ tsp garlic powder salt and pepper sour cream and chives for garnish Preheat oven to 375°F. Grease a muffin tin with oil or cooking spray. Using a kitchen towel or cheesecloth, drain the excess water from the potatoes. In a large bowl, mix potatoes with olive oil, garlic powder, salt and pepper. Press potato mixture into each muffin cup created a small reservoirin the centre. Bake for 30-40 minutes or until they reached your desired crispness. Top with sour cream and chives. This recipe makes 6 rostis. You could double it to make a dozen. Enjoy! Almond Breakfast Bites 1½ cups almonds ½ cup sunflower seeds ¼ cup raisins ¼ cup cranberries ½ cup almond butter ¼ cup honey Line a muffin tin with cupcake liners. In your food processor pulse almonds and sunflower seeds until they become coarse crumbs. In a small saucepan or in the microwave, heat almond butter and honey until they are smooth and easy to pour. In a large mixing bowl, combine almond mixture, raisins, cranberries and almond butter mixture. Use your hands to mix everything thoroughly. Press mixture into each muffin cup. Watch as Parents Magazine shows when to worry about food allergies! Ninety percent of food allergy symptoms are caused by milk, eggs, peanuts, tree nuts, fish, shellfish, wheat, or soy. Within a few minutes to an hour of eating a specific food, your baby could experience the side effects of food allergies. However, it could take days, especially if your breastfeeding baby has a reaction to a food you have eaten. These are the three symptoms to watch for. A skin rash, such as hives, will produce itchy bumps as a classic allergic reaction. Eczema is another common symptom. Consistent diarrhea or vomiting after eating a particular food may mean your baby has a food allergy, but it could also be a sign of an intolerance, which is less serious. Blood-streaked stool is a common indicator of a cow's milk allergy, or lactose intolerance. Lastly, circulation and breathing issues are very serious signs of allergic reactions. Call 911 immediately if he is experiencing anaphylaxis, the most serious food allergy symptom. Luckily, more than 80 percent of allergies to eggs, milk, wheat, and soy fade by age five. Vegan Gluten Free Chocolate Chip Muffins | Kid-approved and allergy friendly

These scrumptious chocolate chip muffins are dairy-free, gluten-free, egg-free, refined sugar-free and vegan. They are fantastic for school lunch boxes and are allergy-friendly as well. They are so quick and easy to make and I am sure you will love them as much as our family does. For the recipe you will need the following ingredients: DRY INGREDIENTS 1 CUP Buckwheat Flour ¼ CUP Tapioca Starch / Arrowroot 1 Tsp Cinnamon 1 Tsp Baking Powder ½ Tsp Baking Soda ¼ Tsp Salt ¼ CUP Dairy-Free Dark Chocolate Chips WET INGREDIENTS 4 Large Bananas (Mashed) ¼ CUP Olive Oil (or any other baking oil) ¼ CUP Maple Syrup (or other liquid sweeteners of choice) 1 Tsp Vanilla Extract INSTRUCTIONS 1. Preheat oven to 180°C/350°F on Fan Bake 2. Grease your muffin trays if you are not using silicone 3. In a large mixing bowl, combine all the dry ingredients (except the chocolate chips) and whisk together. 4. In a separate mixing bowl, finely mash the bananas, then add the rest of the wet ingredients and stir until well combined. 5. Stir in the chocolate chips. 6. Spoon the batter into your muffin tray (approx. 24 small muffins or 12 large) 7. Bake until golden and a toothpick inserted into the center comes out clean. Approx. 12 minutes for small muffins or 20-25 minutes for large muffins. 8. ENJOY 😊 Love Sandy xo
