Gluten is part of our daily lives, due to the large number of foods that contain gluten that we eat every day. We do this without realizing how much gluten we are ingesting. Breads, cakes, pizza, pastas, cookies, and biscuits all contain gluten—and there are many more also. Without a doubt foods that contain gluten are among the most consumed foods all over the world. I mean, who doesn’t like pasta, right? Meanwhile a lot of people are allergic or intolerant to gluten without realizing it. Few people know what gluten really is and where it’s found. Then, what exactly is gluten? It’s the mixture of proteins that are specifically found in the formation of grains such wheat, rye, and barley. Because many foods are made from these grains, including healthy foods such as cereal bars, gluten is widely found in our food chain. Knowing that gluten is, is an important step in improving your quality of life; however, some of the symptoms of a gluten allergy or intolerance are so common that many people don’t even realize they are allergic or intolerant to gluten. Besides that, few people know the name associated with gluten intolerance, and are therefore unable to seek treatment or change their eating habits. Have you ever heard of Celiac Disease? This sickness is an autoimmune condition that affects people with hypersensitivity to gluten. Let’s learn about the ten most common symptoms related to a gluten allergy, in order to understand the best way to create a routine to avoid gluten. 1. Digestive problems Slow digestion or indigestion is one of the main symptoms of gluten intolerance and/or Celiac Disease. It’s important to be especially alert to constant flatulence, stomach pain, bloating, and diarrhea. 2. Headache One sign of possible gluten intolerance is chronic headaches, especially after eating anything with gluten in it. This is not a symptom closely linked to Celiac Disease, but it is a good indication of whether you are intolerant to gluten. Try to pay attention whether or not the pain starts after eating foods with gluten. 3. Chronic Weakness Constant fatigue, without having performed any physical exercise, is a strong indication of gluten intolerance as well as for Celiac Disease. 4. Mental Confusion Gluten intolerance can cause confusion, dizziness, and difficulty concentrating. Be aware, as these are also symptoms associated with fatigue, stress or aging. 5. Joint Pain Gluten intolerance causes inflammation in various parts of the body, especially in the joints. 6. Immune System Problems Immune system failures can be consequences of a gluten intolerance. With Celiac Disease, the clearest symptom is anemia, which also damages the immune system. 7. Depression Gluten intolerance is also harmful to people who have depression because it intensifies the symptoms of anxiety, irritability, and sudden mood swings. 8. Skin Lesions For people who have Celiac Disease, skin lesions such as rashes, eczema, psoriasis and others, are very clear symptoms of the disease. These symptoms also appear in people with a gluten intolerance, but to a lesser degree. 9. Tooth Decay When the person has a gluten intolerance, the teeth are weakened and there is a greater chance of cavities. 10. Hormonal Disorders Hormones can also be severely affected in people with an intolerance to gluten. In cases of Celiac Disease, a very rapid increase or decrease in weight may be symptomatic of estrogen levels which are out of control. So periodic hormone-level tests are very important. What to do if you have Celiac Disease and/or gluten intolerance? If you notice more than one of these symptoms in your daily routine, the first step is to pay a visit to your doctor and ask him to order multiple tests. Ask specifically for him to run the test for Celiac Disease. After diagnosis, be prepared to eliminate gluten from your daily diet. If the symptoms are extremely bothersome, you can also do a simple test: Eat a gluten-free diet for a while and check for improvement in your condition. If you feel better, just confirm the diagnosis with the doctor so you can continue your treatment. I’m using the popular “Wacky” or “crazy Cake" recipe which is known for no eggs, or dairy needed People back then ate this up during the great depression. The frosting is made out of soy, and its consistency was perfect and the same as regular buttercream For taste, I felt like the chocolate was moist and with the frosting it was even more perfect. Before making a cake be sure to clean and sanitize the area you’re working in, and your kitchen tools and bowls. Check all the ingredients in your ingredients. My 5 year old is allergic to eggs, dairy, peanuts and wheat. How can he get enough protein?

You mentioned that you have a 5 year old son who's allergic to eggs, dairy, peanuts, and wheat, and you're concerned about him getting enough protein in his diet. And this is a valid concern since he can't eat dairy and he can't eat eggs or peanut butter (which is also a good source of protein for kids). But it does sound like he can just eat meat, and the best way to get protein is to eat real protein sources, and so I suggest feeding him lentils and beans in his meals, as well as giving him real meat sources. So bacon, sausage, diced chicken, sliced turkey (that would especially be good for lunch), fish, lean ground beef, and pork for dinner - those are all good options. And actually, a child his age only needs about 19 grams of protein daily, so that's a little bit less than what most people think. And a child should not be given protein supplements or powders unless directed to do so by a pediatrician. So I suggest talking with your pediatrician about it, and based on their knowledge of his allergies, and his growth, and overall circumstances, they can give you tailored information and advice about whether supplementation is necessary. They can also refer you to a dietician, if warranted, and they can discuss different protein options that would be good for him. Try some gluten free brownies here: https://www.youtube.com/watch?v=hQOF6gXq7Xc Here is a vegan frosting you can try: 1 1⁄2 cups confectioners' sugar 1-2 tablespoons vanilla-flavored soymilk 1⁄4 cup vegan butter, softened (or dairy free margarine) 1 teaspoon vanilla extract Blend the margarine and sugar together. Add in the vanilla extract and blend Add enough of the almond milk/soy milk to make a spreadable frosting. Makes enough to frost the cake in the video. Cake recipe: 1 1/2 cups flour 3 tbsp unsweetened cocoa powder 1 cup white sugar (Make sure you use a vegan variety of sugar, apparently some white sugar is whitened by having contact with charcoal made from cow bones) 1/2 tsp baking soda 1/2 tsp salt (I used Himalayan pink salt, that's why it looked strange). 1 tsp white vinegar 1 tsp vanilla extract 5 tbsp vegetable oil 1 cup water Prepare an 8x8" baking dish by greasing it well. I used non-stick aluminum foil and it worked very well. Combine the dry ingredients right in the baking dish. Make three depressions in the dry mixture, two small, one large. In one small depression pour in the vinegar, in the other small one the vanilla and in the large one, the oil. Pour the cup of water over all and stir until combined. Dig around in the corner so that there is no more dry stuff to be found. Bake at 350F for about 30 minutes until a toothpick inserted in the center comes out clean. Grease a muffin tin with oil or cooking spray. Using a kitchen towel or cheesecloth, drain the excess water from the potatoes. In a large bowl, mix potatoes with olive oil, garlic powder, salt and pepper. Press potato mixture into each muffin cup created a small reservoirin the centre. Bake for 30-40 minutes or until they reached your desired crispness. Top with sour cream and chives. This recipe makes 6 rostis. You could double it to make a dozen. Enjoy! Almond Breakfast Bites 1½ cups almonds ½ cup sunflower seeds ¼ cup raisins ¼ cup cranberries ½ cup almond butter ¼ cup honey Line a muffin tin with cupcake liners. In your food processor pulse almonds and sunflower seeds until they become coarse crumbs. In a small saucepan or in the microwave, heat almond butter and honey until they are smooth and easy to pour. In a large mixing bowl, combine almond mixture, raisins, cranberries and almond butter mixture. Use your hands to mix everything thoroughly. Press mixture into each muffin cup. ▾ Open for recipe ▾ For this chocolate mousse, you'll need : • 200g of chocolate (7oz) • 2 tbps of plant based milk (25g) • 200g of chickpea liquid (7oz) • 50g of raw sugar (¼ cup / 1.7oz) ▸ Pour your milk in a sauce pan & set on low heat. ▸ Break the chocolate over it & let it melt very slowly, if possible at 40°c (104°F). Mix vigorously ▸ Once it’s all melted, leave aside so it cools down. ▸ Pour out the liquid from a can of chickpeas in a tall container. ▸ Add the sugar to the container & beat the liquid with an electric mixer. ▸ Take 2 big spoons of beaten chickpea liquid & blend vigorously with the chocolate. ▸ Take 3 spoons of the beaten liquid & this time, mix more gently with the chocolate. ▸ Take all the left beaten liquid & incorporate it the more delicately you can with the chocolate. ▸ Pour your mousse into grasses or cups. ▸ Bang the glasses on the counter and shake back and forth to level the mousse. ▸ Leave for at least 6 hours in the fridge. http://delicaroom.com/chocolate-mousse/ ▸ You can also keep the chocolate in the wraper & hit it against the edge of the counter, it’ll make chucks without messing up you kitchen. A low fat, dairy & egg free version of this staple of french baking ▾ Open for recipe ▾ For 2 servings of this crème brûlée you'll need : • 100ml (3.4oz) of plant based milk • 200ml (6.8oz) of soy or rice cream • 50g (1.7oz) of raw sugar • 2 pinches of agar powder • 1 teaspoon of corn starch • Half a vanilla bean or vanilla powder ▸ Put your stove on medium heat & put the milk in a sauce pan. ▸ Add the sugar & whisk. ▸ Add the teaspoon of corn starch & mix vigorously to avoid any lumps. ▸ Cut your vanilla bean in half without scrapping it and add it in. ▸ Add the soy or rice cream ▸ Leave it for 1 minute on medium heat and keep whisking. ▸ If you used half a vanilla bean, take the bean out using a fork & scrap the seeds out with a knife. ▸ Add the two pinches of agar powder. ▸ Let it cook for 2 more minutes, never stop whisking the mix. ▸ Bring to boil while whisking vigorously, and remove the pan from the heat. ▸ Remove the vanilla beans with the fork. ▸ Pour the cream into ramekins or low bowls and leave to cool for a few minutes before putting them into the fridge for at least one hour. ▸ Once jellified, sprinkle some sugar all over your cream. ▸ Set your torch on a strong flame, almost completely blue & turn the sugar to caramel. ▸ Serve and eat! Watch as Parents Magazine shows when to worry about food allergies! Ninety percent of food allergy symptoms are caused by milk, eggs, peanuts, tree nuts, fish, shellfish, wheat, or soy. Within a few minutes to an hour of eating a specific food, your baby could experience the side effects of food allergies. However, it could take days, especially if your breastfeeding baby has a reaction to a food you have eaten. These are the three symptoms to watch for. A skin rash, such as hives, will produce itchy bumps as a classic allergic reaction. Eczema is another common symptom. Consistent diarrhea or vomiting after eating a particular food may mean your baby has a food allergy, but it could also be a sign of an intolerance, which is less serious. Blood-streaked stool is a common indicator of a cow's milk allergy, or lactose intolerance. Lastly, circulation and breathing issues are very serious signs of allergic reactions. Call 911 immediately if he is experiencing anaphylaxis, the most serious food allergy symptom. Luckily, more than 80 percent of allergies to eggs, milk, wheat, and soy fade by age five. Always check very carefully for any bones before giving to your baby! Always cook thoroughly! Recipe for gluten free and dairy free fish pie Ingredients: 1 1/2 pounds (700g) potatoes 1/2 pound (250g) salmon 1/2 pound (250g) cod 2 tablespoon unsalted butter 1.Pre-heat oven to 400F/200C 2.Steam or boil the potatoes until tender 3.Drain and mash the potatoes with the butter 4.Steam the cod fish for 2-3 minutes 5.Cut the fish into chunks (and check carefully for bones!) 6.Line a baking sheet and spread both fish at the bottom of a tray and cover with mashed potatoes. 7. Bake for 20minutes NOTE: You could use only one type of fish. If you use salmon - there is not need to steam it. If you use cod - it is better to steam it for 2-3 minutes. BENEFITS of fish: babies need a lot of the omega-3 fatty acids found in fish for brain, nerve, and eye development. It is also high in protein, vitamin D and other important nutrients. ALLERGIES: When can I give my baby fish? For decades, parents were advised to delay introducing allergenic foods until 12 months (cow's milk dairy), 24 months (eggs) or even 36 months of age (fish, tree nuts, peanuts). Then, in 2008, the American Academy of Pediatrics (AAP) retracted its previous guidelines due to insufficient evidence to support delayed introduction of allergens as a strategy to reduce the risk of food allergy. In 2013, the American Academy of Asthma, Allergy and Immunology (AAAAI) released a new set of recommendations on infant feeding practices to help prevent food allergy. The recommendations are based on the available observational research to date, and are the first guidelines to state that delaying introduction of foods like wheat, cow's milk dairy, eggs, fish and nuts may actually result in an increased risk of food allergy or eczema. If there is not a history of food allergies in your family, fish can be introduced to your child after the six-month mark. If allergies do run in your family, it is best to consult with your doctor. ______________________________________ The Baby-led weaning (BLW) approach to start on solid food has great benefits for our babies and for the family as a whole.
