Gluten is part of our daily lives, due to the large number of foods that contain gluten that we eat every day. We do this without realizing how much gluten we are ingesting. Breads, cakes, pizza, pastas, cookies, and biscuits all contain gluten—and there are many more also. Without a doubt foods that contain gluten are among the most consumed foods all over the world. I mean, who doesn’t like pasta, right? Meanwhile a lot of people are allergic or intolerant to gluten without realizing it. Few people know what gluten really is and where it’s found. Then, what exactly is gluten? It’s the mixture of proteins that are specifically found in the formation of grains such wheat, rye, and barley. Because many foods are made from these grains, including healthy foods such as cereal bars, gluten is widely found in our food chain. Knowing that gluten is, is an important step in improving your quality of life; however, some of the symptoms of a gluten allergy or intolerance are so common that many people don’t even realize they are allergic or intolerant to gluten. Besides that, few people know the name associated with gluten intolerance, and are therefore unable to seek treatment or change their eating habits. Have you ever heard of Celiac Disease? This sickness is an autoimmune condition that affects people with hypersensitivity to gluten. Let’s learn about the ten most common symptoms related to a gluten allergy, in order to understand the best way to create a routine to avoid gluten. 1. Digestive problems Slow digestion or indigestion is one of the main symptoms of gluten intolerance and/or Celiac Disease. It’s important to be especially alert to constant flatulence, stomach pain, bloating, and diarrhea. 2. Headache One sign of possible gluten intolerance is chronic headaches, especially after eating anything with gluten in it. This is not a symptom closely linked to Celiac Disease, but it is a good indication of whether you are intolerant to gluten. Try to pay attention whether or not the pain starts after eating foods with gluten. 3. Chronic Weakness Constant fatigue, without having performed any physical exercise, is a strong indication of gluten intolerance as well as for Celiac Disease. 4. Mental Confusion Gluten intolerance can cause confusion, dizziness, and difficulty concentrating. Be aware, as these are also symptoms associated with fatigue, stress or aging. 5. Joint Pain Gluten intolerance causes inflammation in various parts of the body, especially in the joints. 6. Immune System Problems Immune system failures can be consequences of a gluten intolerance. With Celiac Disease, the clearest symptom is anemia, which also damages the immune system. 7. Depression Gluten intolerance is also harmful to people who have depression because it intensifies the symptoms of anxiety, irritability, and sudden mood swings. 8. Skin Lesions For people who have Celiac Disease, skin lesions such as rashes, eczema, psoriasis and others, are very clear symptoms of the disease. These symptoms also appear in people with a gluten intolerance, but to a lesser degree. 9. Tooth Decay When the person has a gluten intolerance, the teeth are weakened and there is a greater chance of cavities. 10. Hormonal Disorders Hormones can also be severely affected in people with an intolerance to gluten. In cases of Celiac Disease, a very rapid increase or decrease in weight may be symptomatic of estrogen levels which are out of control. So periodic hormone-level tests are very important. What to do if you have Celiac Disease and/or gluten intolerance? If you notice more than one of these symptoms in your daily routine, the first step is to pay a visit to your doctor and ask him to order multiple tests. Ask specifically for him to run the test for Celiac Disease. After diagnosis, be prepared to eliminate gluten from your daily diet. If the symptoms are extremely bothersome, you can also do a simple test: Eat a gluten-free diet for a while and check for improvement in your condition. If you feel better, just confirm the diagnosis with the doctor so you can continue your treatment. I’m using the popular “Wacky” or “crazy Cake" recipe which is known for no eggs, or dairy needed People back then ate this up during the great depression. The frosting is made out of soy, and its consistency was perfect and the same as regular buttercream For taste, I felt like the chocolate was moist and with the frosting it was even more perfect. Before making a cake be sure to clean and sanitize the area you’re working in, and your kitchen tools and bowls. Check all the ingredients in your ingredients. To make sure it doesn’t contain anything dairy, or eggs. Chocolate Cake 6 cups All-Purpose Flour 4 cups white sugar 2 teaspoons salt 1 tablespoon and 1 teaspoon baking soda 1 cup unsweetened cocoa powder 1-1/2 cups vegetable oil 1/4 cup distilled white vinegar 1 tablespoon and 1 teaspoon vanilla extract 4 cups cold water Makes one 8-inch cake, one 6-inch, and 19 cupcakes Dairy Free Frosting • 4 cups Earth Balance Buttery Sticks (Vegan) • 8 teaspoons vanilla extract • 12 cups of powdered sugar • A tiny bit of water Enough frosting to decorate the 8 inch and 6 inch cake (two tiers) and 19 cupcakes. Decorations: 2-3 small cans of dotted sprinkles Sticks, scrapbooking paper, letter stickers. baker's twine or thick string, hot glue gun.

Try some gluten free brownies here: https://www.youtube.com/watch?v=hQOF6gXq7Xc Here is a vegan frosting you can try: 1 1⁄2 cups confectioners' sugar 1-2 tablespoons vanilla-flavored soymilk 1⁄4 cup vegan butter, softened (or dairy free margarine) 1 teaspoon vanilla extract Blend the margarine and sugar together. Add in the vanilla extract and blend Add enough of the almond milk/soy milk to make a spreadable frosting. Makes enough to frost the cake in the video. Cake recipe: 1 1/2 cups flour 3 tbsp unsweetened cocoa powder 1 cup white sugar (Make sure you use a vegan variety of sugar, apparently some white sugar is whitened by having contact with charcoal made from cow bones) 1/2 tsp baking soda 1/2 tsp salt (I used Himalayan pink salt, that's why it looked strange). 1 tsp white vinegar 1 tsp vanilla extract 5 tbsp vegetable oil 1 cup water Prepare an 8x8" baking dish by greasing it well. I used non-stick aluminum foil and it worked very well. Combine the dry ingredients right in the baking dish. Make three depressions in the dry mixture, two small, one large. In one small depression pour in the vinegar, in the other small one the vanilla and in the large one, the oil. Pour the cup of water over all and stir until combined. Dig around in the corner so that there is no more dry stuff to be found. Bake at 350F for about 30 minutes until a toothpick inserted in the center comes out clean. You mentioned that you have a 5 year old son who's allergic to eggs, dairy, peanuts, and wheat, and you're concerned about him getting enough protein in his diet. And this is a valid concern since he can't eat dairy and he can't eat eggs or peanut butter (which is also a good source of protein for kids). But it does sound like he can just eat meat, and the best way to get protein is to eat real protein sources, and so I suggest feeding him lentils and beans in his meals, as well as giving him real meat sources. So bacon, sausage, diced chicken, sliced turkey (that would especially be good for lunch), fish, lean ground beef, and pork for dinner - those are all good options. And actually, a child his age only needs about 19 grams of protein daily, so that's a little bit less than what most people think. And a child should not be given protein supplements or powders unless directed to do so by a pediatrician. So I suggest talking with your pediatrician about it, and based on their knowledge of his allergies, and his growth, and overall circumstances, they can give you tailored information and advice about whether supplementation is necessary. They can also refer you to a dietician, if warranted, and they can discuss different protein options that would be good for him. Gluten Free, Dairy Free and Egg Free Meatballs

Gluten, dairy, and egg free meatballs 1 cup GF bread crumbs 2 tablespoons Italian seasoning blend 2 Tablespoons Garlic Powder * I sub 1Tbs Paprika &1Tbs Onion Powder due to allergy to garlic* 1 Tablespoon of Parsley 1/4 cup dehydrated onions 1teaspoon of salt, and pepper 2 tablespoons of balsamic vinegar 1/4 cup of Pureed silken Tofu * Or use 1/4 cup Parmesan cheese if can eat* 1/4 cup flax seed ground * Or use 1 egg if can eat* 2to 3lbs of ground meat. I used ground beef this time. You can use ground turkey, Chicken, or Pork. Combine all ingredients and mix until completely blended. Scoop into at least 2 oz. meatballs. Bake in a oven set at 350 degrees for 25 to 35 minutes. Depending on your oven it may take longer. Serving Suggestions: Serve as a meatball sub, with Pasta and sauce of your choice. Gluten Free Dairy Free Recipes: Fettuccine Alla Carbonara

Sometimes you want something rich and creamy that tastes decadent without being bad for you. This used to be one of my favorite Italian pasta dishes, but between the gluten and dairy, it was a nightmare. I had relegated it to one of those things I'd never eat again, when one day I had an inspired idea. This was the result and while it's not vegan, due to the eggs, it is gluten and dairy-free and pretty darn yummy! Ingredients: 1 box of Gluten Free pasta (Jovial Rice pasta is Dr. Vikki's favorite) 1 medium organic shallot, diced 1 cup of organic baby peas, fresh or frozen - you can substitute other vegetables, peas are just classic to the dish 1/2 cup of Daiya Mozzarella cheese or you can make your own cashew cheese. (I'll be showing this one soon!) 1/8 cup of unsweetened dairy-free milk (almond or rice) 1/8 cup of Mayonnaise or Veganaise 2 organic pasture-raised eggs Method: Put on a large pot of "clean" water with a tablespoon on celtic sea salt on high heat. Once water is boiling, add the entire box of Jovial pasta and follow cooking instructions. While the pasta is cooking, place 2 tsp of avocado oil (or tea seed or almond or coconut) to a medium saucepan on medium heat. Once oil is warm, add the shallot and saute 3 or 4 minutes until softened. Add peas to shallots and continue on medium heat until the peas are warmed and softened, about another 5 minutes. Add salt and pepper to taste. While peas and pasta are cooking, combine the Daiya cheese, non-dairy milk and mayonnaise of you choice in a small bowl. Break the eggs and scramble gently with a fork in a small separate bowl. Drain the pasta and have a bowl underneath strainer to collect hot water. Put the pasta back into the pot and take a tablespoon or two of the hot pasta water and add it to your raw eggs. This will temper the eggs and begin their cooking process. Now add the eggs and water to the hot pasta and combine with a fork. You'll see the eggs cook before your eyes. It just takes less than a minute. Now quickly add the cheese, milk and mayonnaise mixture to the pasta. Put the past on low-medium heat to keep warm. If the pasta seems too "stiff" add a tablespoon or two of the hot pasta water you reserved. When it's nice and creamy, add salt and pepper to taste and put peas and shallots over the top. Serve immediately. Remember, as is true in so many pasta dishes, this one needs to be prepared when you are ready to sit down and enjoy it. It doesn't "sit" well for long. Buon appetito!
