Many of the products we use every day — drinking bottles, cosmetics, furniture, toys — can contain endocrine disruptors, chemicals that affect human health by altering the body’s natural hormones. Pregnancy and fetal development represent an especially sensitive life stage that may be uniquely vulnerable to the effects of endocrine disruptors, and the passage of a major overhaul of the Toxic Substances Control Act — the first such update in 40 years —provided the EPA with new power to review chemical safety and protect biologically vulnerable groups like women and children. What do we know about endocrine disruptors and their impact on reproduction, fertility and pregnancy? How do racial and ethnic differences influence our exposure to these chemicals and their impacts, and how can policymakers work to minimize their proliferation? In this Forum, scientists came together with policy experts to discuss the latest research on endocrine disruptors, risk management and recommendations for regulation decision-making. The US department of agriculture planted ragweed in the inner city of Baltimore, in the suburbs and in the countryside 40 miles away. The inner city urban ragweed plants grew twice as big as the rural plants and produced five times the amount of pollen. 20:45: Antibiotic soaps and Food Allergies When your skin touches Triclosan, the antibiotic soap, it is absorbed and travels throughout your body. Researchers measured the level of Triclosan in nasal secretions. Fifty percent of the people tested, had Triclosan in their nose. Triclosan is supposed to be antibacterial, but it changes the microbiome in the nose to increase the ability of dangerous staph bacteria to attach to human cells. If you have Triclosan in your nose, you have a greater amount of staph in your nose. It is a major cause of sinus infection and staph releases and secretes proteins called super antigens. If you are making them in your nose, they are in the mucus and you are swallowing them. Super antigens screw up your immune system. They inactivate a group of white blood cells called regulatory T-cells or T-regs. T-regs keep your immune system from over-reacting. People with allergies have defective T-reg cells. Studies done in Europe show that people who have nasal polyps, associated with chronic nasal allergies, inflammation and sinus infections, have a very high rate of food allergy. Study participants were more allergic to food than to environmental allergens. Nasal polyps are associated with staph. A study measured the amount of Triclosan in children’s urine. There was a direct relationship between the level of Triclosan in the urine and the likely hood that the children would have allergies. 26:48 The Microbiome: A lack of diversity of microbes in your gut, in your respiratory tract, and in your nasal mucosa is highly associated with allergy. The micobiome or fungal part of the microbiome is now being explored. As our microbial diversity is shrinking, the fungal organisms are taking over. The microbes living in our bodies have a profound affect upon your immune system. Two thirds of your immune system is located in your gut. The gut is the training center for your immune system. The lymphocytes in your gut circulate throughout your body and communicate information, returning to the gut. The gut is where the immune system gets most of its information. Antibacterials, antibiotics, herbicides and pesticides kill bacteria. Glyphosate (in Roundup) is in Roundup Ready GMO foods, because the plants have been designed to resist its effects. Glyphosate is an antibiotic. When chickens eat food containing glyphosate, their gut bacteria is screwed up and it encourages the growth of harmful bacteria.

Scary Facts About The Meatpacking Industry! In 1906, Upton Sinclair wrote The Jungle, a not-so-fictional novel about the meat packing industry and its terrible secrets. While things have improved greatly since the horror show days of the old slaughterhouses, things can still be awful for the workers and the consumers. The Occupational Safety and Health Administration (or OSHA) was founded in 1971 and is in charge of inspecting company offices, warehouses and factories for safety and health issues. Unfortunately, their job can be tough when it comes to the meat packing industry. Laws could state that certain protocol must always be followed, but all the slaughterhouse has to do is make sure things look good when the inspector stops by once every few months. Once he's gone, it's business as usual. Records show that OSHA has not been fining companies nearly as much in recent years. Could it be that meat-packing plants have been vastly improving their health and safety? Could it be that they improve everything for inspection day? Or, could it be that they pay off OSHA to look the other way? It's hard to tell where the truth lies, but when news reports still come out about injured and harmed employees, it's a safe bet that the lack of fines does not come from higher quality working conditions. Number 9: Health Concerns. Meat packing has never been a safe profession. Sharp devices and crowded quarters are a recipe for disaster, and things have not improved much over the years. Couple this with little to no legal oversight in the past and regulators ignoring issues to this day and you have what is still one of the highest risk jobs in the country. Slaughterhouses of the past were known to have been covered with every liquid an animal has to offer. Before quality refrigeration, meat would spoil much quicker, creating a cloud of bacteria in the building for everyone to inhale. Like in the past, today's slaughterhouses put many employees at risk of injury due to fast acting machines and little physical room for error. Along with all of these conditions, employees tend to work long shifts with limited breaks, making human error a daily problem. A slip up here or there can easily lead to tainted meat hitting the market and poisoning the public. So, the next time you hear about a meat recall, it may not be due to something that happened at the farm. Number 8: Growth Hormones. Pump an animal full of hormones to make them grow bigger and you'll get extra meat to sell. The only issue is what exactly is being put into the animals? What kind of affects does it have on the human body when we eat the meat? Growth hormones have been used of years to get more milk from cows, grow larger chickens and to get more product in every way possible. Regrettably, for the consumer, the science is still out on the long-term effects of these hormones when people eat the meat or drink the milk. Still, it all goes into our food without a problem. The European Union has long banned grown hormones for animals being used for meat, but the USDA is perfectly fine with it. It seems other countries may be catching onto something that the US isn’t. Number 7: Antibiotics As A Solution. Antibiotics are good. They eat bacteria and keep us healthy. That's why we have them in so many products. However, they can become bad pretty quickly when we ingest way too much of them. Thanks to the meat packing industry, we are probably doing just that. Stats show that up to 70 percent of all antibiotics created in the US are put into animals at the slaughterhouse. That's a ton of antibiotics for one single industry! Companies could just maintain cleaner conditions for the animals before they are brought to the meat packing plant, and they could maintain cleaner spaces at the plant, but instead they pack in as much "meat soap" as possible. While it may help prevent disease from developing in the processed meat, it could definitely be too much. When too many antibodies are introduced, it can weaken the immune system due to lack of any bacteria coming in at all. So, when a new bacterium shows up, it could be much worse that it would have been. Number 6: Cloned Meat. Cloning animals is nothing new. In 1997, scientists cloned "Dolly" the sheep, opening a can of worms for concerns about animal cloning for meat.

Although he was aware of its existence, Ben Franklin could no more explain the food coma than modern science can today. It’s a mystery of biology. But this hasn’t stopped scientists from slapping a clinical term on it: postprandium somnolence. Post meaning “after” and “prandium” from the Latin for luncheon. It describes the sensation of getting sleepy after a big meal. But food comas are counterintuitive. After we stuff our stomachs with lots of calories, we should have an increase in energy, not a sudden decrease. And, following this logic, the more we eat, the more energetic we should be, no? Mysterious indeed. One food coma hypotheses is that the introduction of lots of food to the gut causes the body to redirect blood there to aid in digestion. Some of this redirected blood is taken from the brain, which leaves the human who’s recently eaten a big meal in a stupor. Sounds logical and hilarious, but, unfortunately, it’s wrong. Because it’s so important (and, possibly, because it’s the organ in charge of directing blood flow) the brain receives a steady supply of blood to meet its energy demands. While it is true that your gut receives more blood flow to aid in digestion, it comes from the skeletal muscles, not the brain. How about another one? The tryptophan myth. This one is commonly believed because so many people experience the food coma on Thanksgiving, and turkey – which contains lots of tryptophan – is a common feature of the Thanksgiving meals that lead to food comas. Tryptophan is an amino acid that is a precursor to serotonin, which is a neurotransmitter that is a precursor to melatonin, which is a hormone that aids in sleep. The logic goes that when eating a big turkey dinner, we eat a lot of tryptophan, which is ultimately converted to melatonin; hence the food coma. The problem with this hypothesis is that there’s more tryptophan in lots of other foods, like cheddar cheese, bacon, salmon and chicken that we don’t normally associate with food comas. Researchers believe that we’d have to ingest tryptophan alone on an empty stomach to notice any effect. When we eat it in food, it enters competition with all of the other fats, proteins and amino acids in food. So less of it gets absorbed and converted into melatonin. BUT! There is some science behind the Thanksgiving food coma. It turns out that when we eat lots of carbohydrates – like we do on Thanksgiving – the insulin released causes other proteins and amino acids to be absorbed by the muscles, but leaves the tryptophan untouched and in greater concentrations in the blood. This could ultimately produce a postprandium somnolent effect. And then there’s orexin. One of this neurotransmitter’s roles is to promote wakefulness and when the neurons that make it are turned off, we get drowsy. A 2006 study found that even modest increases in blood glucose – which rises when we eat – can lead to a decrease in orexin. So perhaps this is the key to food comas. For the time being, though, the jury is still out: We know food comas happen, we just don’t know how. So let’s order some wings and pizza and do some more science! The wasps are called gall-inducers. ---+ What do oak galls look like? If you’ve ever spent a Summer or Fall around oak trees – such as the stalwart Valley Oak – Quercus lobata, or the stately Blue Oak, Quercus douglasii – you may be familiar with the large, vaguely fruity-looking objects clinging to the branches and leaves. Commonly called oak apples, these growths are the last thing you’d want to put in your mouth. They are intensely bitter, loaded with tannin compounds – the same compounds that in modest amounts give red wine its pleasant dryness, and tea its refreshing earthy tang. That said, the oak apple’s powerful astringency has been prized for millennia. Tanning leather, making ink or dye, and cleaning wounds have been but a few of the gall’s historical uses. But on closer inspection of these oaks – and many other plants and trees such as willows, alders, manzanitas, or pines – you can find a rogue’s gallery of smaller galls. Carefully peeking under leaves, along the stems and branches, or around the flower buds and acorns will likely lead you to unexpected finds. Smooth ones. Spiky ones. Long skinny ones, flat ones, lumpy, boxy ones. From the size of a golf ball down to that of a poppy seed. These structures wear shades of yellow, green, brown, purple, pink and red – and sometimes all of the above. A single tree may be host to dozens of types of gall, each one caused by a specific organism. And their shapes range from the sublime to the downright creepy. One tree may be encrusted with them, like a Christmas tree laden with ornaments and tinsel; and the next tree over may be almost completely free of galls. Why? It’s a mystery. ---+ How do oak galls form? Galls are generally formed when an insect, or its larvae, introduce chemicals into a specific location, to push the plant’s growth hormones into overdrive. This can result in a great profusion of normal cells, increased size of existing cells, or the alteration of entire plant structures into new, alien forms. Lots of creatures cause them; midges, mites, aphids, flies, even bacteria and viruses. But the undisputed champs are a big family of little wasps called Cynipids– rarely exceeding the size of a mosquito, a quarter of an inch in length. “These tiny wasps cannot sting,” says Dr. Kathy Schick, Assistant Specialist/Curatorial Assistant at the Essig Museum of Entomology at UC Berkeley. “Gall-inducers are fascinating in that they are very specialized to their organ of the host plant.” ---+ What are oak galls? Dr. Thomas Rau and the Paracelsus Clinic in Switzerland have successfully treated many chronic and sick Lyme patients with biological medicine. Is Bone Broth the new Green Juice? • Bone Broth is typically made with bones and can contain a small amount of meat adhering to the bones. As with stock, bones are typically roasted first to improve the flavor of the bone broth. Bone broths are typically simmered for a very long period of time (often in excess of 24 hours). This long cooking time helps to remove as many minerals and nutrients as possible from the bones. At the end of cooking, so many minerals have leached from the bones and into the broth that the bones crumble when pressed lightly between your thumb and forefinger. 1. Heal and seal your gut. a cup a day works miracles for leaky gut syndrome. The gelatin in the bone broth (found in the knuckles, feet, and other joints) helps seal up holes in intestines. Most People Have Some Degree of Gut Dysfunction These Days... Leaky gut is the root of many allergies and autoimmune disorders for example. When combined with toxic overload, you have a perfect storm that can lead to neurological disorders like autism, ADHD, and learning disabilities. 2. Protect your joints. Taking glucosamine supplements to help with joint pain has been common knowledge for years, but it turns out that bone broth has glucosamine too. But unlike pills, the broth also includes a host of other goodies that help keep your joints happy, healthy, and pain-free. The chondroitin sulfate in bone broth has been shown to help prevent osteoarthritis. 3. Look younger. Bone broth is a rich source of collagen. You can find collagen in all kinds of “plumping” products these days, but why stick it on the outside when you can drink it? Not only is drinking it cheaper, but it can make your skin, hair, and nails look just as radiant. 4. Sleep better, and feel better. The glycine in bone broth has been shown in several studies to help people sleep better and improve memory. 5. Immune support. Bone Broth is considered a “superfood” thanks to the high concentration of minerals. The bone marrow can help strengthen your immune system. A Harvard study even showed that some people with auto-immune disorders experienced a relief of symptoms when drinking bone broth, with some achieving a complete remission! 6. Stronger bones. The phosphorus, magnesium, and calcium in the bones seeps out into the broth leaving you with the essential building blocks for healthy bones. 7. It’s very economical! What else were you going to do with those chicken carcasses, soup bones, and veggies going bad in your fridge? Bone Broth Helps Get the Toxins Out. The liver is the master organ of detoxification. Unfortunately, it was never intended to withstand the very toxic, chemical nature of today’s world. The liver is certainly under assault on a daily basis, and its capacity to detoxify is limited by the availability of the amino acid glycine. Guess where you can get tons of glycine from? Bone broth, Boo Yah! Bone Broth Reduces Your Need for Meat and Protein. This is pretty darn interesting. In her fantastic Real Food Summit (RFS) presentation, Sarah Pope revealed that studies conducted in the 1800s demonstrated that when there is plenty of gelatin in the diet, the body’s need for protein from meat sources can be reduced by as much as fifty-percent! We all know that purchasing quality meats can be hard on the wallet. The good news is that you can make bone broth for dirt cheap and thus save money on meat. Necessary Amino Acids Broth is an excellent source of several essential amino acids that are often difficult to get from diet alone: • Proline: A precursor for hydroxyproline, which the body uses to make collagen, proline helps the body break down proteins and helps improve skin elasticity and smoothness (and avoiding wrinkles). It is often recommended for its benefits to the heart, including keeping arteries from stiffening. • Glycine: Necessary for DNA and RNA synthesis and digestive health. It is used for the production of glutathione, for blood sugar regulation and digestion (though bile salt regulation). “Glycine also enhances muscle repair/growth by increasing levels of creatine and regulating Human Growth Hormone secretion from the pituitary gland.” • Arginine: Helpful for proper kidney function, wound healing and proper kidney function. There is some evidence that arginine is helpful in keeping the arteries supple and improving heart health. • Glutamine: Bone broth is an excellent source of glutamine How to Use Broth Broth is extremely versatile and many chefs use it as a base for soups, gravies, sauces and more.
