Pickled Watermelon Rind! (Sweet, Spicy, and Crunchy) Cut the end caps off a small watermelon then stand it up on end. Cut slices straight down about 2 inches wide. Remove the red watermelon from each slice leaving a 1/8 inch of red on the rind. Take a potato peeler and cut off all the outer green skin. Cut the strips in to 1/2 inch cubes and put them in a sterilized quart or pint jars leaving a good inch head space at the top. Make the brine below.... Brine: 1 cup of water 1 & 1/2 cups of (white) or (apple cider) vinegar 1 & 1/2 cups of white sugar (maybe 2 cups) 1 tsp. whole black peppercorns 1/2 tsp. red pepper flakes 3 tbsp. Kosher salt (You can also add 2 tsp. coriander seeds) (I forgot) (Apple Cider Vinegar has a bit more bite and the white vinegar is a bit smoother... especially when you use 2 cups of sugar.) Mix and bring to a boil and simmer for one minute... Remove from the heat and let cool for a couple minutes then add 1 cup of ice cubes and stir until they are gone. I only used 1 cup of water at the top of the recipe because this one cup of ice will melt down to 1/2 water and help cool the brine to warm. Pour the still very warm (not hot) brine over the cubed rind and twist the lids on pretty snug. Now turn the jars upside down and store in the refrigerator for 1 to 4 days.... how ever long you can stand it... but they are really good starting the next day. Keep them in the refrigerator but... because of the salt and vinegar they will last 3 or 4 weeks easy! (They will be gone before that!) Enjoy! P.S. I just made a new batch with 1 & 1/4 cup white vinegar and only 1/4 cup of apple cider vinegar, 2 cups of sugar and 1 tbsp. of good old pickling spice. It was really good as well. Not quite the bite of all apple cider vinegar ... try them both!

It isn't summer until you've had your first watermelon of the season. Chances are though, it's been about a year since you've bought your last watermelon. Do you remember how to pick out a good one? Many people have no idea how to select a watermelon. They just knock on this over-sized fruit as if they know what they are doing. Although it can be difficult to know how ripe the interior is just by inspecting the outside, there are several clever tricks you can learn to help you pick the perfect watermelon. 1.Lift a few The watermelon should be heavy for its size, as this indicates that it is full of water and therefore nice and ripe. Try comparing the weight of your watermelon with another of equal size - the heavier one will be the riper. This advice goes for most fruits and vegetables. 2.Look for the field spot. The underside of the watermelon should have a creamy yellow spot, known as the field spot. This is where the melon sat on the ground and ripened in the sun, so the darker it is the better! This one is no wives' tale. If the field spot is white, or even nonexistent, this probably means that the watermelon was picked too soon, and will not be ripe. 3.Inspect the color. A perfect, ripe watermelon should be dark green in color and dull in appearance, rather than shiny. A shiny watermelon will usually be under ripe. 4.Say no to stem If the melon still has a stem on it, move along. This means the melon didn't come off the vine easily so it wasn't quite ripe. You could look for a melon with a slightly indented end. This indicates that the melon came off the vine on its own. 5.What about knocking? knocking is pointless, however you can hold the watermelon like you're cradling a baby and give it a good thwap, you'll feel the vibrations in your bottom hand if the watermelon is right. 6.What about selecting a pre-cut melon? If you're purchasing pre-cut watermelon, there are also certain things to look out for. Choose pieces with bright red flesh and dark brown or black seeds. Avoid pieces with white streaks and an abundance of white seeds. They are also full of fiber which will help you feel full for longer. Another great thing about avocados that was discovered during a study from The Ohio State University at Columbus is that avocados help you absorb more cartenoids from fruits and vegetables, up to 15x more to be exact. So not only will avocados help you burn fat, but you'll also be strengthening your immune system and absorbing more cancer fighting cartenoids than ever. Next we have eggs. Eggs are great to incorporate into your diet plan because they’re high in protein, high in healthy fats and they can help you feel full for a very low amount of total calories. Eggs are also one of the most bioavailable sources of protein out there. Meaning that your body can very efficiently digest, absorb, and assimilate the protein found in eggs. Having a solid protein source like eggs in your diet will help you prevent muscle loss while you eat less calories to create enough of a deficit to burn fat. Lets move on to one of the best fruits you can eat while trying to lose belly fat...berries. The next food isn't really a food, but instead its a drink that's been proven very effective at helping you fight that belly fat...apple cider vinegar. Apple cider vinegar has been shown to help people lose weight and waist circumference. These aren't they typical animal studies that you constantly see that don't necessarily guarantee the same results for people. Instead these are human studies. One of these studies was 12 weeks long and it demonstrated that obese individuals could lose anywhere from 2.6 to 3.7 pounds just by consuming 1 to 2 tablespoons of apple cider vinegar per day. It has also been shown to improve blood sugar spikes after meals, and it can help increase fullness after a meal. In fact one study showed that taking apple cider vinegar with a high carb meal could result in people eating 200 to 275 less calories for the day. Keep in mind, you want to make sure that you dilute only one to two tablespoons of the apple cider vinegar in water. Don't drink it straight up. Next I have another high protein food for you and that's tuna. Tuna is a very lean fish that's pretty much entirely made up of protein. This makes tuna a great option to increase protein intake without increasing calorie intake too much. The important thing is if you're buying canned tuna you want to make sure you get the tuna in water not oil.
