is one of the most wonderful dish with a combo of flavours emanating from the naturally aromatic earthy flavoured leaf commonly known as curry leaf or karipak and the heat or spiciness from the freshly ground pepper corns infused into chunks of chicken cooked in a yummy onion tomato and spices thick gravy. http://www.vahrehvah.com/curry-leaf-pepper-chicken Onions 1 n Salt Ginger garlic paste 1 ts Turmeric ¼ ts Tomatoes 2 n Coconut (grated) 2 tb Chilly powder 1 tb Coriander powder 1 tb Oil 2 tb Fennel seeds 1 ts Curry leaves 3 sp Chicken pieces 750 g Pepper (crush powder) 2 tb Coriander chopped 1 b Heat oil in a pan add onions, salt, cook this for 2 minutes then add ginger garlic paste, turmeric, sauté it and add tomatoes, grated coconut, chilly powder, coriander powder, mix this and put the lid on and cook it for 2 minutes, let it cool down and put it into the blender and make a paste. This beginners chicken is vary easy to prepare and the speciality of this dish with same one gravy we can prepare four different chicken curries. http://www.vahrehvah.com/chicken-curry-for-beginners-with-curry-powder Ingredients: Curry powder 2 tb Chicken 500 g Cream 2 tb Pepper powder 1 tb Green chilly 3 n Chopped onion (medium size) 2 n Tomato 4 n Coconut milk ¼ cup Coriander chopped 1 bunch Ginger garlic paste 1 tb Oil 2 tb Directions: Heat oil in a pan add chopped onions, salt, cook this till golden in colour, add ginger garlic paste, sauté it, add chopped tomatoes, cook it for 2 minutes and add curry powder, mix it and cook this in a slow flame, add chicken pieces, sauté it put the lid on and let it cook for sometime then add water, again put the lid on and let it cook till chicken is tender. 1. Restaurant style of chicken curry : Take the chicken curry in a pan add cream and mix it and sprinkle some coriander leaves. 2. Indian chicken fry : Take the chicken curry in a pan add pepper powder, chopped green chilly, curry leaves, coriander leaves, sauté it till the gravy is drys out and chicken fry is ready. 3. Liver masala is a nice dry dish and a popular dish in dhabas and restaurants especially to have with drinks. Made with a mixture of spices and liver together combined and nicely coated. liver of lamb cooked with indian spices till tender http://www.vahrehvah.com/liver-masala Ingredients 1 tsp coconut powder 1 bunch coriander leaves 1 tsp corinader powder 2 no each number garama masalas 1 tsp ginger garlic paste 1 small Lemon 500 grams Liver 2 tbsp Oil 1 cup onions 1 tbsp red chili powder 1 to taste salt 1 pinch Turmeric As needed 0 water Directions Take a bowl add live pieces into it add some milk to it and soak for 30min and then wash it with water, then add pinch of red chilli powder,salt,oil,ginger garlic past and mix it well. Now take a nonstick pan add little oil then add the spices mixed liver pieces into it and saute them and let it cook for 5min and transfer it to another plate. Take the same pan add oil, garama masalas, onions,ginger garlic paste,turmeric, mix them then add red chilli powder,coriander powder,coconut powder saute them add little water and let it cook for 5-10 min in very low flame. Once masala is cooked add the cooked liver pieces into it and close with a lid cook for 2-3 min in slow flame. After 3min remove the lid add some chopped coriander leaves if required lemon juice and serve. Lamb Vindaloo traditionally is a spicy hot dish made with coconut, vinegar and lots of hot red chilli peppers. Chili pepper was introduced by Portuguese traders during 16th century and with this came the development of Vindaloo dishes in Goa. http://www.vahrehvah.com/lamb-vindaloo Ingredients: vinegar 1/2 Cup sugar 1/2 Teaspoons mustard seeds 1/2 Teaspoons cumin seeds 1/2 Teaspoons cinnamon 1 Piece cloves 3 Numbers ginger small 1 Numbers Garlic 6-7 Numbers pepper corns 1/2 Teaspoons Red chilli dry 5-6 Numbers salt as needed Lamb 500 Grams oil 2 Tablespoons coconut milk or Feni 1 Cup onions 1 Cup water as needed Directions: 1. Wash lamb apply salt and keep it a side for 1 hr. ( Optional raw papaya blend in a blender and add to the lamb to cook fast or tender) 2. Soak all these in vinegar and coconut milk for 30min red chilli,pepper corns,garlic,ginger,cloves,cinnamon,cumin seeds,mustrad,sugar. 3. Then blend till fine paste.After one hour take the lamb add all the spice mixture mix well and keep a side for 4 hours.After 4 hours take a pan add oil, lamb masala cook for 5min then add chopped onions. 4. Cover the pan with a lid by adding some waternbsp; and cook in a low flame.cook till the lamb is tender or oil oozes out. Loose chilli prawns are crispy and spicy snack or appetizer made with prawn batter coated and deep fried until done and then tossed in a spicy chilli masala. http://www.vahrehvah.com/loose-chilli-prawns Ingredients: Prawns 500 g Salt Chilly powder 2 tb Soya sauce 2 tb All purpose flour 1tb Corn starch 1 tb Ginger & garlic 1 tb Green chilly 3 n Curry leaves 2 sp Pepper crushed 1 ts Coriander chopped 1 b Sugar 1 ts Oil for deep fry Directions: Take a bowl add prawns, salt, chilly powder, Soya sauce, mix it and add all purpose flour, corn starch, sprinkle water and mix this. In a blender add chopped Ginger & garlic, green chilly, curry leaves, crush pepper, chopped coriander, sugar, salt, make a coarse paste. Heat oil in a pan deep fry the prawns. Heat oil in another pan add made coarse paste cook it till moisture is evaporated, and add fried prawns, toss it. There is something magical about the smell, taste and texture of freshly made . http://www.vahrehvah.com/masala-bread-rolls Ingredients: butter unsalted 4 Tablespoons sugar 2 Tablespoons milk 1 Cup yeast dry 2 Teaspoons eggs 2 Numbers All Purpose flour - Maida 4 Cup salt 2 Teaspoons Directions: 1. Take a bowl add dry yeast to warm milk,sugar, mix well and leave it for 10 min to dissolve the yeast.In another bowl add eggs beat them then add to yeast mixtur,butter mix well 2. Take a big bowl add maida, salt, mixture of beatten egg and yeast add slowly and keep mixing to form a soft, sticky dough.Knead the dough add 1tps of oil, until smooth and cover with a kitchen towel, let it rise for 1- 1 1/2 hour untill double in size. 3. After 1 hr turn the dough out onto a floured work surface, knead untill smoothe,shiny and elastic and rest it for another 10min.Take a bowl add one egg mix well for eggwash if required can add water to it and mix it again 4. Now Divide the dough into small rounds or shapes as required place the rolls on a buttered baking tray or dish. cover it with a towel for 5 min then brush eggwash the roll. 5. Preheat the oven for 425F/220C bake for 15-20 till golden brown colour.once it is done then apply butter on top of it. This ennai kathirikkai kulambu is one of the typical south Indian gravies which will be definitely liked by all. Tender eggplants are stuffed with the roasted masala mixture and shallow fried in oil to get it cooked and again it is simmered/cooked in masala tamarind gravy to get the traditional taste. http://www.vahrehvah.com/brinjal-curry-ennai-kathirikai-kulambu Baby Eggplant 200 g Onions 1 n Salt Ginger garlic paste 1 ts Turmeric ¼ ts Tomatoes 2 n Coconut (grated) 2 tb Chilly powder 1 tb Coriander powder 1 tb Oil for fry Mustard seeds ¼ ts Fenugreek seeds ¼ ts Red chilly 4 n Urad daal ½ ts Curry leaves 2 sp Tamarind juice ¼ cup Jaggery 1 small Piece Heat oil in a pan add onions, salt, sauté it for 2 minutes then add ginger garlic paste, turmeric, add tomatoes, grated coconut, chilly powder, coriander powder, put the lid on and let it cook for 2 minutes then let it cool down, put it into the blender and make a paste. Heat oil in a pan add mustard seeds, fenugreek seeds, red chilly, urad daal (optional), curry leaves, add the prepard paste of onion, tomato and coconut, mix this and put the lid on and let it cook for 5 to 6 minutes, add tamarind juice, water, mix it, add jaggery, once it comes to boil add fried baby egg plant, salt, mix it well and cook this for few minutes, then switch off the flame. Grind coriander leaves, Curry leaves, green chilly, ginger and garlic to a coarse paste. 2. Add the ground paste in the bowl and then add salt, garam masala powder, chilli powder, food color, Rice flour, all purpose flour, lemon juice, one tablespoon of curd and mix well. 3. Then add the chicken pieces and mix well, keep in the refrigerator at least 3 to 4 hours. 4. Take it out ½ hr before frying. 5. Okra in tamarind gravy or Bendakaya pulusu is a very popular dish in Andhra made with lightly fried Okra cooked in spicy tangy tamarind sauce. http://www.vahrehvah.com/bendakaya-pulusu Ingredients: Okra 250 g Red chilly whole 3 n Mustard seeds ½ ts Fenugreek seeds ¼ ts Green chilly 3 n Garlic 5 n Curry leaves 1 spr Turmeric ¼ ts Hing 1 pin Onions 1 n Chilly powder 1 tb Coriander powder 1 ts Cumin powder 1 ts Tamarind juice 100 ml Water 50 ml Coriander chopped 1 b Oil 2 tb Jagerry (grated) 1 tb Directions: Heat oil in a pan add whole red chilly, mustard seeds when mustard seeds crackle add fenugreek seeds, green chilly and garlic, curry leaves, turmeric, hing, toss for a half a minute till the flavors come out, add onions and okra (cut them into 1 inch size) salt, sauté them and add chilly powder, coriander powder, cumin powder, tamarind juice, water mix it them and put the lid on and cook for 10 minutes in a slow flame till okra is tender. Add jagerry mix it well and garnish with coriander leaves put the lid on rest for 15 minutes after serve this with rice. Vegetable Semiya Upma is a very south Indians house hold speciality brakefast dish and this recipie will be a easy guied for making it http://www.vahrehvah.com/vegetable-semiya-upma Ingredients: Semiya 1 cup Ghee 1 ½ tb Mustard seeds ¼ ts Cumin seeds ¼ ts Chana daal ¼ ts Urad daal ¼ ts Cashew nuts 10 g Ginger chopped ¼ ts Green chilly 4 n Curry leaves 2 sp Hing Turmeric pinch Onion chopped (medium size) 1 n Salt Carrot pieces ¼ cup Potato pieces ¼ cup Green peas ¼ cup Sweet corn ¼ cup Lime juice 1 ts Coriander chopped ½ bunch Directions: Heat ghee in a pan add semiya and roast it and keep it aside. In the same pan add ghee, mustard seeds, when mustard seeds is splutter, add chana daal, Urad daal, cashew nuts, sauté it till daals are slightly brown, add chopped ginger, chopped green chilly, curry leaves, hing, turmeric, chopped onions, salt, sauté it for a minute and add carrot, potatoes, green pea, sweet corn, mix it well, add water, once it comes to boil add semiya, mix it and put the lid on let it cook for 2 minutes, then sprinkle the lime juice & coriander chopped put the lid on and let it cook for one more minute the switch off the flame. Red lamb curry is an exotic dish; tender mutton pieces cooked in a spicy yogurt based gravy. The lamb meat is almost cooked very slowing in its own juices acquiring the flavours from spices. Add boiled and mashed dal and place the lid and cook for 15 minutes in a slow flame. Ingredients used in Pan Fry Chicken • Oil - 2 tablespoons. • Whole garam masala - 25 grams. • Dry red chilies - 4 number. • Onions(chopped) - 1 number. • Chicken - 200 grams. • Ginger garlic paste - 1 tea spoon. • Turmeric powder - 1/2 tea spoon. • Cumin powder - 1/2 tea spoon. • Coriander powder - 1/2 tea spoon. • Tomatoes (chopped) - 2 number. • Water - as required. • Garlic (chopped) - 1/2 tea spoon. • Curry leaves - 1 springs. • Crushed pepper - 1/2 tea spoon. • Coriander leaves (chopped) - 1/2 bunch. • Green chilies - 3 number. Method: Firstly heat oil in a pan add whole garam masala, dry red chilies, onions, salt and cook until onions are slightly brown. Now add chickenpieces, ginger garlic paste, turmeric powder, cumin powder, coriander powder, tomato pieces and cook till tomatoes are soft. Then add water and cook the chicken for 12-15 by closing the lid on. Now drain thecurry, separate the chicken pieces and keep aside. Take a blenderadd cooked masalaingredientsmake it into a fine paste. Heat butter in the pan and add some onions and sprinkle salt, sauté them, and switch off the flame. Onions put it in the top of the fish and put the fish plate in the oven cook it for 15 minutes. In the rest of onions add sugar, thyme, add cup of cooked basmati rice, and add chilly flakes. Dum Ka Chicken in traditional method -- A popular Hyderabadi dish known as Dum ka Murgh, is a very rich, aromatic and flavourful dish; chicken cooked in its own juices combined with lot of spices, almonds and cream in slow cooking method. http://www.vahrehvah.com/dum-ka-chicken-chicken Ingredients: Chicken 1000 g Chironji 1 tb Cashew nuts 1 tb Ginger garlic paste 1 ts Fried onions (medium size) 2 n Yogurt 1 cup Green chilly paste 1 tb Red chilly powder 1 tb Cloves 5 n Cardamom 4 n Cinnamon sticks 3 n Shahi jeera ½ ts Cumin powder ½ ts Coriander powder 1 tb Turmeric ¼ ts Salt Mint chopped ½ b Coriander chopped ½ b Lime juice 1 tb Oil 2 tb Directions: Take chironji and cashew nuts, put into the blender and add water make a paste. Take a pan(with lid) add chicken, add the paste of chironji and cashew nuts, ginger garlic paste, fried onions, yogurt, green chilly paste, red chilly powder, whole garam masala, cumin powder, coriander powder, turmeric, salt, chopped mint, chopped coriander and squeeze the lime juice and add oil mix this well rest it for 2 hour, after that take out the chicken, add water(optional if required as gravy ), then take the lid and place the edges with dough on the lid and seal it, cook this in a medium to flame for 15 minutes and reduce the flame and place back the pan on the iron tawa and cook this in a slow flame for 25 minutes. Bhuna masala is a basic simple masala made with red chillies, garam masala and garlic that is used for flavouring different types of meat and vegetables curries. The Indian spices used are rich in spiciness, flavourful and aromatic. Bhuna literally means sautéing or browning, hence the spices are firstly nicely roasted and ground to make a classic spice powder. "Bhuna" is also a technique of searing the meat first with the spice mix and cooking the seared meat in low flame for few hours. This slow cooking process helps the chicken or meat to cook in its own juices.This process results in giving a deep strong flavours with some very thick sauce. The meat cooked in a slow cooking process along with freshly ground spices gives an amazingly golden colour to the dish. Tip- Thighs & drumstick cut pieces suits well for making this dish. Alternatively you could also just grill the seared chicken to make a perfect crisp and juicy appetizer. Ingredients: http://www.vahrehvah.com/chicken-bhuna-masala Chicken, legs & breast pieces - ½ kg Dry Red chillies - 6-7 nos Cardamom - 3-4 nos Cloves - 4-5 nos Cinnamon - 2-3 pieces Garlic - few cloves Yogurt - ½ cup Mustard Oil for frying Salt - to taste Method: Firstly soak some red chillies in water. Boil and keep aside. To the red chillies, add garam masala, garlic and grind to a fine paste. Remove all the masala in a bowl. Add about ½ cup yogurt in the masala and mix well. Put the chicken pieces in the yogurt masala mixture and mix well. Add salt and mix again. Marinate the chicken coated with masala for about 2-3 hours in the refrigerator. In another pan, add in some mustard oil. Once the oil comes to a smoking point, add the chicken pieces only without the extra masala and fry slowing till the masala almost dries off. Then add the remaining leftover masala and mix well. Cover with lid and cook until the chicken is cooked and the bhuna masala gets dried completely. This biryani is slightly different from the usual method,the chicken is first fried and them added to the masala. it was a Trivandrum style biryani,but the frying took the  flavor and taste to a new level. http://www.vahrehvah.com/fried-chicken-biryani Ingredients: Mint chopped 1 Bunch Tomatoes 3 Numbers Whole garam masala (each) 3 Numbers Garam masala 1 Tablespoons Chilly powder 1 Tablespoons Salt To Taste Ginger garlic paste 1 Tablespoons Turmeric 1/4 Teaspoons Chicken 1000 Grams Coriander chopped 1 Bunch Lemon juice 1 Teaspoons Basmati rice 2 Cup Saffron 1/2 Grams Oil 2 Tablespoons Directions: 1. Take a bowl add chicken, turmeric, ginger garlic paste, salt, chilly powder, garam masala powder, mix it and keep it aside for 30 minutes. And deep fry them for 160c to 170c till 70% cooked. 2. Heat oil in a pan add whole garam masala, chopped onion; cook this till onions are golden in colour, add turmeric, salt, tomatoes, cook this till tomatoes are soft. 3. Add chilly powder, coriander powder, green chilly, curd, chopped mint and coriander, salt and add water, in this add fried chicken, lemon juice, garam masala powder and add basmati rice (soak in the water for 30 minutes and 70% cooked) add fried onions, saffron colour. 4. Cover the pan with dough and close it with its lid, place the pan on tava in high flame for 5 minutes, after that cook it in a slow flame for 15 minutes. Butter chicken or murgh makhani is an Indian dish from the Punjab region popular in countries all over the world.This creamy curry Indian butter chicken recipe combines ethnic spices with simple ingredients like onion, butter, and tomato sauce for a tasty dish. http://www.vahrehvah.com/butter-chicken Ingredients: Chicken breast 2 n Yogurt 1 c Butter 2 tb Cumin powder 1 ts Coriander powder 1 tb Chilly powder 2 tb Ginger garlic paste 1 ts Kasoori methi 1 ts Fried onions 2 tb Salt Sugar 1 ts Butter 2 tb All purpose flour ½ ts Tomato puree 1 cu Khoya 1 tb Cream 2 tb Directions: First marinate the chicken breast with yogurt, salt, chilly powder, and rest for 3 to 4 hours. Heat butter in a pan ad chicken breast, cook it for 15 to 20 minutes in a slow flame. Take a bowl add ginger garlic paste, cumin powder, chilly powder, coriander powder, kasoori methi powder, crushed brown onions (fried onions), salt, sugar and add water, make this into a paste, and keep it aside. Take pan heat butter and add flour, add masala paste, and mix this well, cook for 2 to 3 minutes and add grated khoya, tomato puree, cook it on a slow flame for 15 minutes. In this put the chicken breast pieces and add cream and mix it, cook for 2 minutes and switch off the flame. Lemon rice is a delicious south Indian dish made with steam rice and flavoured with the tanginess of Lemon juice giving an amazing tangy flavor and freshness to the rice. http://www.vahrehvah.com/lime-or-lemon-rice Ingredients 10 grams cashew nuts 10 grams channa dal 100 grams cooked rice 1 springs coriander leaves 1 springs curry leaves 1 slice ginger 5 grams gr chilli 1 pinch hing ( asafoetida) 20 ml lemon juice 5 grams mustard seeds 10 ml oil 10 grams peanuts 5 grams red chilli 1 pinch turmeric 10 grams urad dal Directions Pick, wash and soak rice for about thirty minutes. Drain and then boil in plenty of boiling salted water until almost done. Drain and keep aside. Heat oil/ghee in a shallow pan or a kadai. Add a pinch of asafoetida. mustardsAdd dried red chillies broken into two, urad dal, chana dal and ginger and nuts. Cook until dals change colour to light brown. then add curry leaves. Mix turmeric powder in this. Stir fry for half a minute. Add cooked rice, salt and lemon juice. Garnish with coriander . Prawns Kuzhambu with Onion Tomato and Coconut is an excellent dish cooked in onion, tomato, coconut and tamarind sauce. This is just like a Kuzhambu made in southern India. Onions 2 n Salt Ginger garlic paste 1 ts Turmeric ¼ ts Tomatoes 2 n Coconut (grated) 2 tb Chilly powder 1 tb Coriander powder 1 tb Oil 2 tb Mustard seeds ¼ ts Fenugreek seeds 1/8 ts Red chilly 3 n Urad daal (optional) 1 ts Curry leaves 2 sp Tamarind juice ½ cup Prawns 500 g Pepper crush 2 ts Coriander chopped 1 b Heat oil in a pan add onions, salt, sauté it for 2 minutes then add ginger garlic paste, turmeric, add tomatoes, grated coconut, chilly powder, coriander powder, put the lid on and let it cook for 2 minutes then let it cool down, put it into the blender and make a paste. Add yogurt mix and cover it, let it cook for 3 to 4 minutes on low heat. Add chicken let it cook for 15 minutes.
